This grilled ham and Brie sandwich is piled high with thinly sliced ham, creamy Brie cheese, crispy granny smith apple and sweet blueberry jam for one scrumptious bite. Your belly is definitely gonna do a happy dance!

This ain’t no ordinary sandwich, my friends. Straight-up indulgent, it’s such a treat.
We love grilled cheese sandwiches around here, like this turkey cranberry grilled cheese sandwich, pizza grilled cheese sandwich and, of course, this ham and Brie grilled cheese sandwich.
Breakfast, lunch or dinner, I can eat a cheesy sandwich for any meal. This time I went all out with Brie.
This Brie sandwich tastes so good you’ll wanna break out in a happy dance in the middle of the kitchen. No? Just me? Food does all kinda funny things to me. Ha!
If you want to make things super substantial, enjoy this grilled cheese with a big bowl of tomato basil soup. Talk about a comforting meal!

How To Get Perfect Grill Marks
First off, I love to smear butter on the outside of the sandwich to give a little flavour and to help with the grilling.
A griddle pan is not required to make this grilled cheese sandwich recipe, but surely helps!
If you don’t have a cast iron griddle pan (like I’m using here) use a regular cast iron pan.
The heat should be on medium-low to medium.
You want the sandwich exterior to get all golden brown and crispy and for the cheese to get all oozy and melty.

Tips for Making This Recipe
- Don’t use just any old bread. Use something flavourful and fresh. For this sandwich, I used sourdough. Of course, use store-bought or homemade, whichever you prefer.
- Speaking of bread, the size of the slices you choose will impact how much mayonnaise and butter you use. I had some decent-sized slices of bread and what I used for this recipe was just right.
- I used a variation on my mixed berry chia seed jam and made blueberry chia seed jam for this sandwich, but you could use whatever type of jam you enjoy best.
- Thinly sliced or shaved ham works lovely in this recipe. Your deli should be able to slice it up for you.
- Don’t care for Brie cheese? Camembert works lovely in this recipe.

Grilled Ham and Brie Sandwich
Ingredients
- 2 tablespoons mayonnaise
- 4 slices sourdough sandwich bread, or your favourite bread
- 2 tablespoons blueberry jam
- pinch freshly ground black pepper
- 3 ounces Brie cheese, cut into thin slices (about 85 grams)
- ½ apple, thinly sliced
- 6 ounces cooked deli ham, thinly sliced
- 2 tablespoons butter
Instructions
- Spread mayonnaise over one side of each of the four bread slices. Distribute jam over top of 2 of those slices (over top of the mayonnaise). Sprinkle with a little black pepper.
- Top jam with cheese. Place apple slices and ham on top of cheese. Top with remaining slices of bread (with the mayonnaise side on the inside) to form the two sandwiches.
- Butter the outside of each sandwich (all four bread slices).
- Heat a cast-iron griddle pan or regular cast-iron pan over medium-low to medium heat.
- Place sandwiches in the pan. Cook the sandwiches for about 3 to 4 minutes on one side.
- Carefully flip the sandwiches to the other side and continue to cook for another 3 to 4 minutes or until they're golden brown and crispy outside and the cheese is melted inside. Carefully remove from the pan, cut in half (if desired), serve and enjoy!

I’ve tried dates in a grilled cheese – but never thought to add jam even though am a huge fan of that sweet+cheesey+savory combination of flavors between crusty fried bred! You weren’t kidding when you said gourmet grilled sandwich, Dawn! This looks incredible. I love playing around with grilled cheese ingredients, but I don’t think I’ve ever tried a brie or camembert. I love both styles, but I typically just slice ’em and eat ’em with fresh, chewy Italian bread. Now I need to rethink that…or at least buy extra so that I can make these sammiches sometime soon! These bad boys are right up my alley.
