Breakfast doesn’t get much easier (or tastier) than this fried egg taco! A sunny-side up egg sits upon a warmed tortilla with hummus and baby spinach. For extra flavour and texture, it’s topped with Everything Bagel Seasoning, crumbled feta cheese, crunchy corn chips and a drizzle of hot sauce. Talk about a quick and satisfying meal!
I seem to be enjoying lots of different breakfast recipes lately. It’s no surprise, really. I legit go to bed at night thinking about what I’m going to eat the next day, especially what that first meal of the day will be. You too?
This fried egg taco is beyond easy. I mean, in about 10 minutes you could be devouring it. Even though it’s breakfast-y, it also makes an awesome late-night snack.
Though it’s made with simple ingredients, this breakfast taco recipe has loads of flavour and texture. The sunny-side up egg acts kind of like a sauce for the taco, then you have creamy, salty and crunchy elements from the hummus, feta cheese and corn chips. Even on days that I’m kind of in a rush to get out the door, I can manage to whip up one of these tacos.
Really rushed for time in the mornings? Prep some overnight oats, and you’ll have a breakfast that’s ready when you are!
Ingredients
- Flour tortilla: Use a small flour tortilla, something around 5 to 5.5 inches in diameter. You don’t want the tortilla to large so that your filling/tortilla ratio is off, ya know?
- Hummus: I used this traditional store-bought hummus (not sponsored), but you can also use homemade hummus.
- Baby spinach: Just a few leaves adds a pop of flavour and nutrition.
- Butter: Used for cooking the egg. You can substitute with margarine if you like.
- Egg: The star of the recipe! One large egg is sufficient for this egg taco.
- Seasoning: Crushed red pepper flakes, black pepper and Everything Bagel Seasoning add lots of flavour.
- Feta cheese: Crumbled feta cheese adds a lovely saltiness and taste.
- Corn chips: Give the fried egg taco plenty of texture which contrasts wonderfully with the runny egg.
- Hot sauce: Use your favourite flavour of hot sauce. I typically like to go for a buffalo hot sauce.
How To Make a Fried Egg Taco
Here is an overview of how to make a fried egg taco (full details are in the recipe card below):
- Warm the tortilla in a frying pan, then remove it.
- Spread hummus over the centre of the tortilla, then top with baby spinach.
- Crack the egg into a ramekin or similar small dish (I prefer to do this versus cracking the egg directly into the pan because I want to make sure that I don’t get any shells in the egg). Melt some butter in a pan, then add the egg. Cover and cook the egg until the whites are set (firm) and the yolk is runny. Season with crushed red pepper flakes and black pepper.
- Carefully transfer the cooked egg to the tortilla, then top with Everything Bagel Seasoning, crumbled feta cheese, crushed corn chips and hot sauce. There ya have it, an easy fried egg taco that’s ready to be devoured! Yum!
What To Serve With Breakfast Tacos
This fried egg taco is great all on its own, especially when you are craving something delicious that doesn’t take a lot of time. However, if you want to make things more substantial, it pairs great with:
- Tomato and avocado salad (I like halved grape tomatoes and diced avocado with a drizzle of olive oil and pinch of flaky sea salt)
- Hash browns
- Fruit salad or a simple piece of fruit, like orange or banana
- Baked beans
- Pulled pork and beans
- Black bean and corn salsa with tortilla chips
Tips
- The egg: When making this fried egg taco recipe, I usually cook the egg sunny-side up. Another option is over-easy. Of course, when cooking eggs, you want the whites to be firm/set, but you can cook the yolks to how you like them. I prefer them runny, but you can have them more well done, whatever you prefer!
- Hummus: I use a plain hummus for this breakfast taco, but you can use a flavoured variety (roasted garlic hummus or buffalo hummus would be yummy options).
- Crunch factor: I used crushed corn chips because they add a lovely texture and flavour. If you don’t have corn chips on hand, regular tortilla chips will work just fine (just crush them up).
- Mix up the seasoning: If you don’t have Everything Bagel Seasoning on hand, you can simply add a pinch or two of toasted sesame seeds, garlic powder and/or onion powder. Or, for a twist, try taco seasoning.
- Make more: This recipe can easily be adjusted to make more tacos. Just have all your tortillas warmed and ready to go with the hummus and baby spinach, then it’s just a matter of frying the eggs and adding the toppings.

Fried Egg Taco
Ingredients
- 1 small flour tortilla, about 5 to 5.5 inches in diameter
- ½ tablespoon hummus, use more if you like
- ¼ cup baby spinach, a few leaves
- ½ teaspoon butter, or margarine
- 1 large egg
- ¼ teaspoon crushed red pepper flakes, or to taste
- pinch freshly ground black pepper
- ½ teaspoon Everything Bagel Seasoning
- 2 teaspoons crumbled feta cheese
- 1 tablespoon crushed corn chips
- Hot sauce, drizzle to taste (I like buffalo sauce, but you can use your favourite variety)
Instructions
- Prepare the tortilla: Place the tortilla in a small nonstick frying pan over medium heat and cook until warmed and slightly blistered, about 2 minutes per side. Remove from the pan and spread the hummus in the centre of the tortilla. Top with baby spinach. Set aside.
- Cook the egg: Crack the egg into a small dish, like a ramekin. Melt the butter in the frying pan over low to medium-low heat. Swirl the butter around the pan to coat. Gently pour the egg into the pan. Cover (a clear glass lid works great because you can see what's going on in the pan) and cook the egg until the whites are set (firm) and the yolk is runny, about 2.5 to 3.5 minutes. Season with crushed red pepper flakes and black pepperNote: If you want to cook your egg another way, go for it! For example, if you prefer an over-easy egg, that works too. Cook the egg on one side until the whites are set (firm), then flip the egg and continue to cook on the other side until the yolks are done to your liking.
- Assemble: Carefully transfer the egg to the prepared tortilla and top with Everything Bagel Seasoning, crumbled feta cheese, corn chips and hot sauce. Serve and enjoy!
