    Blueberry Kale Smoothie

    This blueberry kale smoothie takes minutes to make and is absolutely loaded with good-for-you ingredients! It’s super flavourful and makes for a great start to your day or afternoon snack.

    So today is the official first day of summer!! Woot woot! Bring on the nice weather! Did you know that it’s also the longest day of the year and it’s National Vanilla Milkshake day?

    I read recently that milkshakes weren’t initially suitable for kids because they contained alcohol. Just imagine! I would never have guessed that since it’s such an iconic fun kid friendly beverage, especially now. 

    It’s been, like, forever since I’ve had a milkshake. I’m more inclined to have a smoothie than a milkshake. How about you? What would be your favourite flavour? My favourite ice cream flavour is mint chocolate chip hands down and then second would be strawberry.

    I’m so happy that summer has officially begun. Hubby and I have been spending a lot more time in our yard and furry child has been doing lots of running around. Our little herb garden is coming in nicely and I think that our rhubarb is finally ready to cut.

    Blueberry Kale Smoothie

    I’ve been on a real blueberry kick lately. Blueberries everywhere! And I love kale. Perhaps next to cauliflower, it’s my favourite vegetable.

    I wanted to try a green smoothie, meaning using some veg in there. I had this lovely bunch of kale that I had recently picked up. Wondering what to pair with it, blueberries came to mind. I was thinking that their colour (and sweetness) would go nicely with the kale.

    This yummy smoothie has only five simple ingredients. Aside from the blueberries and kale, the liquid base is coconut water (so refreshing). To sweeten things, I added maple syrup. Then to finish and to add extra nutrition and heft, I added chia seeds.

    Hubby loves all kinds of vegetables, like myself. He was mowing the lawn while I was making the smoothie. I poked my head outside, called out to him and handed him the drink, not saying exactly what was in it.  I figured I wasn’t going to tell him it was a smoothie was kale (not that he would mind anyway), but I wanted to get his opinion and see if he noticed it in there. Guess what? He loved it!

    This blueberry kale smoothie has lots of blueberry flavour, but once you know there is some kale in there you can get a slight hint of it and it’s awesome!

    Can I Use Spinach Instead of Kale?

    Most definitely! Baby spinach is a great substitute for kale in this smoothie.

    Blueberry Kale Smoothie

    Ingredients
     

    • 1.5 cups frozen blueberries
    • 1.5 cups coconut water
    • 2 cups chopped kale (bite-sized pieces, leaves only, no stems), loosely packed
    • 1 tablespoon maple syrup, or to taste
    • 1 tablespoon chia seeds
    • fresh blueberries, garnish to taste (optional)

    Instructions

    • Place frozen blueberries, coconut water, kale and maple syrup into a blender and blend until smooth, about 1 to 2 minutes.
    • Add chia seeds to blender and blend another 30 seconds to a minute.
    • Divide smoothie equally among two glasses and garnish with fresh berries (optional). Serve and enjoy!

      Whoa…you got that smoothie PACKED with kale and I bet the not-so-enthusiastic about kale peeps wouldn’t even notice it’s in there. Looks filling, refreshing & delicious – would make a great lunch for me right now 🙂
      I love coconut water. My kiddos, not so much. I make fruit popsicles with it and then suddenly the kids love it. Haha…I always manage to sneak stuff into their diets 🙂

      First day of summer woot woot. It was amazing. Hot, sunny, did I say hot? 🙂 I love warm weather. And this smoothie is perfect. Just look at that blue! Who can resist? And chia seeds. We love this little things (mint family eh?). And maple syrup. And coconut water. There’s nothing not to like here 🙂

        The weather in London sounds a lot like the weather in NL. We get a lot of rain and fog – a lot! When we get some nice weather, everyone is so happy about it 😀 Hazelnut is a lovely flavour of ice-cream. Hahaha…now I’m thinking about ice-cream now too, Miriam. Thanks for the kind words!

      I love smoothies….they are a great way to get a dose of nutrition while I feel like I am indulging in something unhealthy! Blueberries are so yummy in just about everything and add such great flavor!

      Funny I just picked up another huge tub of blueberries, love them. Don’t they make smoothies SUPER thick, almost like a gelatin if you let it set out for a minute. It’s been super hot here and this looks so refreshing right now. Thanks Dawn. Love the maple syrup add, too. 🙂

      This is blue-tiful! 😀 Okay that was a terrible joke, but this smoothie looks amazing. Your revelation about alcoholic milkshakes also sounds pretty good, not gonna lie – last week we were on vacation drinking pina coladas which are basically boozy milkshakes! – but when I’m trying to be good, these smoothies are going to be just right!
