With simple and delicious ingredients, like juicy blueberries, fresh lime juice, honey, coconut water and sparkling water, this lime blueberry mocktail is a cinch to put together and the perfect summer sipper! A little tart, a tad sweet and incredibly thirst-quenching, you’re going to want to make this lime and blueberry refresher all season long!

Now that it’s officially summer (can you believe it?!), I couldn’t be more excited! Though fall is my favourite season, it is always lovely when the seasons change, isn’t it?
And, to my surprise, we’ve been having such nice weather overall. The sun is shining most days and our herbs, trees, and flowers are starting to come back to life. I even harvested some rhubarb from our garden the other day to make strawberry rhubarb crisp.
What better way to celebrate the start of summer than with a refreshing blueberry drink! This lime blueberry mocktail recipe comes together in minutes and hits the spot on warm day.

How To Make a Lime Blueberry Mocktail
Here is an overview of how to make this mocktail recipe (refer to the recipe card below for full details):
- Place some blueberries, lime juice and honey in a cocktail glass or jar.
- Muddle (basically mash) the blueberries. This helps release all the juice and flavour from the blueberries, so the more you muddle, more flavour is extracted. At this point, you can strain the blueberries out, but I prefer to leave them in.
- Pour in some coconut water and add your ice cubes.
- Top up the glass with sparkling water, stir, and garnish with some lime slices and blueberries. There ya have it, a refreshingly delicious easy mocktail recipe!

Do I Have to Strain the Blueberries?
Not at all. As a matter of fact, as mentioned, I prefer to leave them in the mocktail. I think they add a lovely colour, texture and flavour.
If you like, however, after muddling, you can strain the blueberries out by using a fine-mesh sieve. To ensure you get every last bit of flavour from the blueberries, you can use a rubber spatula to press the blueberries against the sieve once you strain them.

Muddler Alternative
If you don’t a proper muddler, don’t fret! Most often, I’ll reach for a wooden spoon anyway. It’s something most people have on hand and works just as good.
Tips and Variations
- This lime blueberry mocktail has quite a bit of lime flavour (which I love). If you want things less tart, then reduce the lime juice. I used two tablespoons per mocktail, so you could easily half that amount should you wish.
- If you have an unsweetened blueberry or lime flavoured sparkling water, you can use that instead of the plain sparkling water for extra fruit flavour.
- For an extra element of flavour (and fanciness), garnish with some fresh mint.
- Instead of honey, you can use another sweetener if you prefer. Maple syrup or simple syrup are also great options in this mocktail recipe.
- Make flavoured ice cubes! If you have the time, you can make coconut water ice cubes by freezing coconut water in an ice cube tray. Not only will they make your drink cold, they’ll add an extra pop of flavour and refreshment to your mocktail as they melt. And, if you want to go even further, before freezing, add a blueberry to each ice cube. Pretty and delicious!
- If you want to turn this lime blueberry mocktail into a cocktail, you can replace some of the coconut water with your favourite liquor. White rum or vodka are great options.

Lime Blueberry Mocktail
Ingredients
- ½ cup blueberries, plus some more for garnish (if desired)
- ¼ cup lime juice, from about 2 limes (plus some slices of lime for garnish if desired)
- 1 tablespoon honey
- 1 cup coconut water
- 2 cups ice cubes
- sparkling water, enough to top up each mocktail
Instructions
- Grab two drink glasses (I used two 2-cup mason jars) and divide the blueberries, lime juice and honey between them.
