This Blueberry Kale Smoothie has got it goin’ on, my friends.  This literally takes less than 5 minutes to make and is absolutely loaded with good for-you ingredients…speaking of ingredients, there are only 5!  Plus, this smoothie is vegan, gluten free, low fat and no refined sugar.  How awesome is that?  So when you are thirsty these coming months, this smoothie will be sure to quench your thirst and give you an extra boost of nutrition.

Hey guys! How are you?  So today is the official first day of Summer!!  Woot woot!  Bring on the nice weather!  Did you know that it’s also the longest day of the year AND it’s National Vanilla Milkshake day?  What a coincidence…..I think not 😉  I read recently that milkshakes were not initially suitable for kids because they contained alcohol.  Crazy, isn’t it?  I would never have guessed that  since it’s such an iconic fun kid friendly beverage, especially now.  It’s been, like, forever since I’ve had a milkshake.  I’m more inclined to have a smoothie than a milkshake.  How about you?  What would be your favourite flavour?  My favourite ice-cream flavour is mint chocolate chip hands down and then second would be strawberry.  For some reason, I can’t see mint chocolate chip making a good milkshake so I’d have to have a strawberry one, if I were so inclined 🙂

I’m so happy that Summer has officially begun.  Hubby and I have been spending a lot more time in our yard and furry child has been doing lots of running around.  He is like a little hulk after it’s all said and done from all the freshly cut grass (furry child, that is).  Our little herb garden is coming in nicely and I think that our rhubarb is finally ready to cut.  I may be a little late on the bandwagon on that one, but better late than never 🙂

I’ve been on a real blueberry kick lately as indicated by here and here.  Blueberries everywhere!  And I love kale.  Perhaps next to cauliflower, it’s my favourite veg.  I wanted to try a ‘green’ smoothie meaning using some veg in there.  I had this lovely bunch of kale that I had recently picked up and I thought ‘what would go nice with kale?’  Of course, blueberries came to mind.  I was thinking that their colour would go nicely with the kale.  Had I used strawberries, for example, who knows what weird colour combo I would concoct.  Plus, blueberries are sweeter than strawberries, in my opinion, so they would balance out the serious heartiness of the kale.

I didn’t just want to make this Blueberry Kale Smoothie a regular ol’ smoothie.  After my failed attempt last week at making a vegan and gluten free zucchini bread (as discussed here), I said I’ll start small and try to do a vegan and gluten free smoothie.  So, that’s where the coconut water comes into play, plus I think that milk would have been odd anyway with the kale.  Are you a fan of coconut water?  There was a time when I didn’t like it, thought that it tasted strange, despite loving all things coconut.  Now, I have coconut water regularly stocked in our fridge.

To sweeten this Blueberry Kale Smoothie, I added just 1 tbsp of maple syrup for 2 servings.  Not much, is it?  But the smoothie was sweet, just the same.  Really good.  To finish this smoothie off and to add extra nutrition, I added chia seeds.  Did you know that chia seeds are part of the mint family?  Who would have thunk it, right?  The chia seeds don’t taste minty, though, but they do add fibre and a bit of texture.

Hubby loves all kinds of vegetables, like myself.  He was mowing the lawn while I was making this Blueberry Kale Smoothie.  I poked my head outside, called out to him and handed him the drink, not saying exactly what was in it.   I figured I wasn’t going to tell him it was a Blueberry Kale Smoothie (not that he would mind anyway), but I wanted to get his opinion  and see if he noticed it in there.

This Blueberry Kale Smoothie is super blueberry-y, but once you know there is some kale in there you can get a slight hint of it and it’s awesome!  Next time you are thirsty and looking for something different, give this smoothie a try and you won’t be disappointed.

Blueberry Kale Smoothie, Vegan, Gluten Free, Low Fat, No Refined Sugar, Chia Seeds, Healthy, Beverage
Instructions
  1. Place frozen blueberries, coconut water, kale and maple syrup into a blender and blend until smooth, about 1-2 minutes.
  2. Add chia seeds to blender and blend another 30 seconds to a minute.
  3. Divide smoothie equally among two glasses and garnish with fresh berries (optional). Enjoy immediately.

    Whoa…you got that smoothie PACKED with kale and I bet the not-so-enthusiastic about kale peeps wouldn’t even notice it’s in there. Looks filling, refreshing & delicious – would make a great lunch for me right now 🙂
    I love coconut water. My kiddos, not so much. I make fruit popsicles with it and then suddenly the kids love it. Haha…I always manage to sneak stuff into their diets 🙂

    This smoothie looks really delicious! I am always looking for ways to get kale into my diet, and this looks like the perfect recipe. Plus, its vegan, gluten free, and low fat…even though I am not a vegan, I love how healthy this sounds. 🙂 I didn’t even know they had national vanilla milkshake day!!! I know this might make me sound boring, but my favorite flavor is vanilla! I like vanilla so I could mess with it, and add all sorts or crazy candy, nuts, and chocolate.       Thank-you!! It’s definitely an easy way to sneak some kale in, that’s for sure! I’m not a vegan, either, but love to mix it up every now and then with my snacks and meals. And I’ve been loving vegetarian meals lately. I remember a long time ago, trying to have a vegetarian diet and not realizing how many options there really are out there and it’s not just pasta and beans. Vanilla is definitely not boring; it’s a classic for good reason, right 😉 ? Enjoy your week too!

    This post is so well timed! I too have been on a blueberry kick (SO good) and I just bought a giant bag of kale for juicing! Problem is, when I make smoothies I do all fruit. I bought the kale with the intention of working it into my fruit smoothies for extra nutrients but I wanted a recipe as a guide – so this is perfect! Can’t wait to try!

    I’ve never thought about using kale in a smoothie…what a fun idea, and a great way to add some (more) powerfoods into a smoothie. Love it! Also, here’s to summer…finally!
