If you’re looking for a hearty start to your morning, try this bagel breakfast sandwich! There are two delicious versions included here (one with mushrooms and spinach and the other with veggie bacon and avocado). Both breakfast sandwiches are utterly cheesy and delicious!
If you know me, you know how I love hearty breakfast recipes, like this scrambled egg sandwich, western sandwich and pizza omelette. These bagel breakfast sandwiches are no exception! They’re super easy to prepare and so yummy!
And if you want to go all out, make these breakfast sandwiches on some homemade bagels.
I’ve included two delicious versions (because we gotta have options), both incredibly easy, cheesy and straight-up delicious.

About Those Eggs
When making your sandwich, you may be tempting to leave the yolks runny.
Delicious?
Of course.
Messy?
No doubt.
Don’t get me wrong, I love a runny egg sandwich, but some days when I don’t feel like using a bazillion napkins, I break the yolks.
The reality is that the yolks make for a delicious Instagram worthy pic, but not so much for real-life eatin’. Feel me?
Having said that, you do you!
After the eggs are flipped, top them with cheese, cover and allow it to melt into melty cheesy goodness.
I was almost, just almost, temped to throw those eggs onto a plate and dig in, lol.
Can I Use Something Else Besides Veggie Bacon?
Of course!
If you don’t want to use veggie bacon, you can your bagel sandwich with crispy regular bacon or pan-fried deli meat (like ham or bologna).
Tips for Making This Recipe
- You can pretty much garnish these with whatever veggie toppings you like. If there’s something you like more of, add more. Alternatively, if you don’t enjoy something, omit it.
- I whipped up a flavoured mayonnaise to go on these bagel sandwiches, but you can simply use mayonnaise, butter or whatever condiment you enjoy best.
- Any variety of bagel works in this recipe, but an “everything” bagel adds lovely flavour and texture.

Bagel Breakfast Sandwich (Two Versions)
Ingredients
Veggie Bacon and Egg Bagel Breakfast Sandwich
- 1 bagel
- ½ avocado, pitted and peeled
- 1 tablespoon mayonnaise
- 1 tablespoon hot sauce, like Sriracha or your favourite variety
- 3 slices veggie bacon, cooked according to package instructions (or regular bacon or ham cooked according to package instructions)
- 1 large egg
- 1 teaspoon butter
- 1 slice American cheese (processed cheese), or about 1 ounce (¼ cup) of shredded cheddar cheese
- 1 roma tomato, sliced
- few slices thinly sliced red onion
Mushroom and Spinach Bagel Breakfast Sandwich
- 1 bagel
- 1.5 tablespoons mayonnaise
- ½ tablespoon chopped fresh chives
- 1 teaspoon olive oil
- 2 ounces fresh mushrooms, thinly sliced (about 60 grams)
- 2 teaspoons butter, divided
- pinch salt
- pinch freshly ground black pepper
- 2 handfuls baby spinach
- pinch ground nutmeg
- 1 large egg
- 1 ounce shredded mozzarella cheese, about ¼ cup
- few slices thinly sliced red onion
Instructions
Veggie Bacon and Egg Bagel Breakfast Sandwich
- Carefully slice bagel in half (horizontally) and toast.
- Mash avocado in a bowl and set aside.
- Mix mayonnaise with hot sauce in a small dish and set aside.
- Cook veggie bacon according to package instructions. Transfer to a plate and set aside.
- Crack the egg into a small dish or ramekin.
- Add 1 teaspoon of butter to a small non-stick frying pan over medium heat. Once the butter has melted and is foamy, carefully pour in the egg. Allow the egg to cook for about 2 minutes (and whites are mostly set) before breaking the yolk.
- Flip the egg to the other side. Add cheese, cover with a lid (so the cheese will melt) and cook for another 1 to 2 minutes or until the whites are completely set, the yolk is cooked to your liking and the cheese has melted.
- To assemble the sandwich, spread avocado over the cut side of the bottom portion of the bagel. Place the egg on top, along with cooked veggie bacon, sliced tomato and red onion. Spread mayonnaise over the cut side of the top half of the bagel. Place over top (with mayonnaise on the inside) to form your bagel sandwich. Serve and enjoy!
Mushroom Spinach Bagel Breakfast Sandwich
- Carefully slice bagel in half (horizontally) and toast.
- Mix mayonnaise with chives and set aside.
- Meanwhile, heat olive oil in a medium non-stick frying pan over medium heat.
- Add mushrooms and cook, undisturbed, for 5 minutes.
- Give mushrooms a little stir and cook for another 3 to 5 minutes, stirring occasionally. Season with a pinch each of salt and black pepper and stir in 1 teaspoon of butter. Transfer to a small bowl or plate and set aside.
- Add spinach to the pan and cook, stirring, until just wilted, about 1 to 2 minutes. Stir in a pinch of nutmeg. Transfer to a small bowl or plate and set aside.
- Crack an egg into a small dish or ramekin.
- Add remaining 1 teaspoon of butter to the pan. Once the butter has melted and is foamy, carefully pour in the egg. Allow the egg to cook for about 2 minutes (and the whites are mostly set) before breaking the yolk.
- Flip the egg to the other side. Add mozzarella cheese, cover with a lid (so the cheese will melt) and cook for another 1 to 2 minutes or until the egg whites are completely set, the yolk is cooked to your liking and the cheese has melted.
- To assemble the sandwich, spread mayonnaise over both cut sides of the bagel. Top the bottom half of the bagel with spinach, cheesy egg, mushrooms and red onion and place the other half of bagel over top (with mayonnaise on the inside) to form your bagel sandwich. Serve and enjoy!

I love a good bagel sandwich! To be honest, I haven’t had one in ages. Lately it’s been all about the cream cheese, but I’ll have to make a bagel sandwich soon.
