This Mixed Nut and Seed Butter is a whole lot of goodness packed in one little jar!  It’s all good-for-you ingredients that you can pronounce and nothing complicated.  There’s a bunch of peanuts, cashews and almonds along with sunflower, pumpkin, chia and sesame seeds and a tiny peck of salt.  This one is going to be your new favourite thing to spread on toast!

Happy Monday peeps!  Truth be told, is Monday really a ‘happy’ day? I guess it could be if we tell ourselves that (over and over and over again, right 😉 ?)  How was your weekend?  We had a busy (but fun) one.  Also, I picked up a favourite childhood toy.  Yes, a toy.  It was Rainbow Brite.  I went crazy when I found out she was being remade.  So I got her, along with her horse, Starlite, and I have her sidekick, Twink, on order.  I may have went a little overboard but she brings back so many memories.  Obviously, she’ll have a permanent fixture on my shelf with Strawberry Shortcake.  And, of course, this is where I say that I’ll never fully grow up.  Those two dolls really stand out to me when I think of childhood toys.  I remember having a Rainbow Brite blanket and Strawberry Shortcake lamp.  Oh, boy, wouldn’t I love to have that now!!  What was your favourite childhood toy?

Aside from picking up dolls, lol, we went to a wedding on Saturday and it was such a beautiful day!  The sun was shining and there was no wind (which is kinda a big thing around here). When it’s not windy you notice it, ya know?

NUTS ABOUT NUT BUTTER

So, onto this Mixed Nut and Seed Butter.  I’ve been obsessed with making my own nut butter since making almond butter and a chocolate version.  And, then I tried a mixed nut butter that I purchased from Costco and thought ‘why not make my own version at home?’ So, of course, I did!  Like, most nut butters, this is preeeeetty simple.   Don’t you just love recreating a restaurant dish or product yourself?  What have you recreated?  It’s especially awesome when it works out better than the original dish.

PREPARATION

All the raw ingredients are simply placed in the food processor and blended.  Nothing to it!  As I mentioned when I made homemade roasted almond butter before, there’s going to be a point when you are mixing the ingredients up and you think ‘nope, this ain’t gonna work.’  Trust me, people, it will.  See the pic above.  See how dry it looks in the second photo and by the third it’s coming together.  Then, the fourth pic?  Smooth as a baby’s bottom.  Just keep rolling with it, stopping every so often to smooth the sides.  And if you don’t want to give your processor a huge workout (or don’t want as much quantity) simply divide the recipe in two.

HOSTESS GIFTS

How cool would it be to make a batch of this and give as a hostess gift?  There’s nothing like homemade gifts.  Put the Mixed Nut and Seed Butter in a mason jar, tie it with a pretty ribbon and hand written tag and way to go!  And you know that it will definitely be appreciated, especially the next day.

FAVOURITE SPREAD

What floats your boat for toast?  I gotta say, this chicka loves her some real butter (or budda as I often like to say), buuuuuut I also love nut butter. I like my bread sliced thin and toasted on just one side.  We have an old fashioned toaster that toasts one side at a time.   It’s old as heck, but it’s the best.  I would be so disappointed if it ever broke. Are you a one side only or toast both sides kinda person?

Instructions
  1. Combine peanuts, almonds, cashews, sunflower seeds and pumpkin seeds in processor and blend for about 10-15 minutes, stopping to scrape sides with rubber spatula as necessary.
  2. Once mixture is smooth, add chia seeds, sesame seeds and salt and blend for about 1 more minutes. Pour into mason jars and store in fridge. Enjoy!

    Rainbow Brite! How awesome is that? I was never a Rainbow Brite kinda guy (strange, right?), but I did love Scooby Doo. I always imagined that I would grow up to be the voice of Scooby Doo. Haha! And as you and I have commented before, we’re still just big kids. Sure, we have jobs and such now, but all I really want to do is wake up on Saturday mornings and watch cartoons while eating powdered sugar doughnuts. 🙂 Maybe this nut butter will help balance out the lack of nutrition in those doughnuts! I love all of the nuts and seeds in there. I’m imagining this spread on a nice hearty piece of toasted whole-grain seed bread…how good does that sound right about now? Happy Monday, my friend!

    You’re really the master of nut butters Dawn! This looks awesome. I can imagine this on (one-side) toasted bread + tea. So good! And OMG Rainbow Brite?? And Strawberry Shortcake! Add the Care Bears and I am set. Ah the good old days 🙂 I remember my mom bought me colouring books that I very rarely used because I didn’t want to ruin it with colour LOL!     I forgot all about Rainbow Bright! It’s funny what will make us nostalgic, isn’t it? I can still remember what my Hello Kitty eraser that smelled like bubble gum and every once in a while I’ll come across a scent that reminds me of it…

    Really love the combination of nuts and seeds in this creamy butter! My favorite breads for toast are loaded with nuts and seeds and this spread would just add more goodness!

    It is so much fun watching whole nuts being transformed into delicious nut butter in a food processor. It is so easy to make and even easier to eat a jar in one go (or is that just me :-)) Like your nut combination – never added chia seeds to mine, something to try next time for sure!     Haha My toaster works the same…it’s not old just so faulty sometimes I swear it has a mind of its own. On some days it works perfectly, toasting both sides perfectly and on others…I am sure on Mondays..it throws it’s tantrums and toasts one side at a time.
    I absolutely love your recipe for this mixed seed and nut butter. It looks so simple and really delicious 😃. I am really going to enjoy this on my toast…but not on Monday 😂

    I know what you mean by ‘there was no wind’, lol! I really can appreciate the beautiful day you describe:) Living in Estes Park had driven us crazy a few years ago! Many trees only had branches on one side… gave up on growing branches against the wind, lol. I am loving this nuts and seeds butter you whipped up. So healthy, yet so delicious.     We already “talked” about this rainbow brite thing, but her along with strawberry short cake and barbie of course were my favorites. I didn’t know they were revamping rainbow brite though!     I sometimes find the flavours of just one nut butter to be kinda flat but using multiple is genius. Something so simple just changed my thought about making them at home.

    I still have a popple (which my computer wants to auto correct to “pope”) upstairs. Cookie tried to steal it for herself but I was like, no way sister! I LOOOOOVED Rainbow Bright too! And the Care Bears and Strawberry Shortcake. I had some scented Strawberry Shortcake books that my mom insists she kept but which are nowhere to be found at my parents’ house :(.     Haha I always say ‘Happy Monday’ buuut it really isn’t so happy for most people, especially non-morning people (like me!). And yay for Rainbow Brite! I saw that on fb and was instantly taken back to my childhood. I used to have a Rainbow Brite comforter and tent…she was a favorite of mine! Along with care bears, Jem (do you remember that cartoon?), Strawberry Shortcake, My little pony, etc. And yay for nut butter!
