Simple yet delicious, this mushroom pizza recipe has so much umami flavour from plenty of sautéed mushrooms and three varieties of cheese (mascarpone, truffle cheddar and Parmesan). Cheesy, savoury and utterly mouthwatering, one bite and you’ll be reaching for that second slice!
I’ve been making all sorts of pizza recipes lately. I mean, it’s pizza … what’s not to love, am I right?
You may recall this dill pickle pizza I shared a little while ago. Was it ever good! If you ask me, this mushroom pizza is just as tasty, especially if you’re a fan of mushrooms (like I am).
Just like lemons, garlic and onions, we always have mushrooms on hand. Aside from this mushroom-packed pizza, mushroom toast is another quick and tasty recipe that we regularly enjoy using mushrooms. If you have a little more time, this meatloaf with mushrooms is always a favourite.
Ingredients
- Cheese: This pizza recipe includes three types of cheese, including mascarpone, truffle cheddar and Parmesan. This is the truffle cheddar cheese that I used (not sponsored). You can use whatever brand you like best.
- Garlic: One clove of fresh garlic really adds a nice garlic flavour. Mince it with a garlic press, knife or the small holes on a box grater.
- Seasoning: Seasoning is kept quite simple, which includes salt, black pepper and thyme.
- Butter: Used for sautéing the mushrooms. Though, I used salted butter, feel free to used unsalted butter or margarine.
- Olive oil: Used for sautéing the mushrooms.
- Mushrooms: I used fresh baby bella (or cremini) mushrooms. They’re pretty readily available and just plain tasty. For this personal size pizza, I used a quarter of a pound of freshly sliced mushrooms. Many of the packages of fresh mushrooms I’ve came across are usually sold in 227-gram packages (or roughly half a pound), so you would need about half of that. Once sautéed, it was about half a cup of mushrooms.
- Store-bought pizza crust: These usually sold in grocery stores where breads, tortillas, naans and the like are found. They are super convenient and help to make this mushroom pizza recipe come together quickly.
How To Make Mushroom Pizza

- Mix the mascarpone cheese, garlic and salt and black pepper together in a small bowl.
- Sauté sliced mushrooms in a little butter and olive oil, then season with salt, black pepper and thyme.
- Spread the mascarpone cheese mixture over a store-bought pizza crust, leaving about a 1-inch border.
- Top the crust with truffle cheddar, sautéed mushrooms and Parmesan.
- Bake the pizza.
- Garnish with more thyme, and then allow the pizza to cool for a couple of minutes before slicing. There ya have it, an easy mushroom pizza recipe that’s ready to be enjoyed!

- Baked polenta fries
- Mushroom soup
- Garden salad
- Caesar salad
Tips and Variations
- Cheese: Truffle cheddar adds so much of a uniquely delicious flavour to this mushroom pizza. If you can’t find truffle cheddar, you can use regular cheddar (a good melting variety) or mozzarella, and then finish the baked pizza with a tiny drizzle of truffle oil.
- Pizza crust: Using a store-bought pizza crust really makes this recipe come together quickly. I used a prebaked crust that was ready to top, then bake. You can use a homemade pizza crust if you prefer. Just keep in mind that you may need to bake the pizza longer to ensure that your crust of choice is cooked through.
- Mushrooms: I used baby bella mushrooms, but white button mushrooms are a perfectly suitable alternative. Since mushrooms are the star of this pizza recipe, I wouldn’t recommend canned mushrooms here.
- Make more: If you’re feeding a bunch of people (or having a pizza party … fun!), then you can easily adjust the ingredients to make more pizzas.
- Protein: Before baking the pizza, you can add a protein if you like. Shredded roast beef or cooked crumbled sausage would be delicious options.

Mushroom Pizza
Ingredients
- 3 tablespoons mascarpone cheese
- 1 clove garlic, minced
- ¼ teaspoon salt, plus a pinch more for the sautéed mushrooms
- ¼ teaspoon black pepper, plus a pinch more for the sautéed mushrooms
- 1 teaspoon butter
- 1 teaspoon olive oil
- ¼ pound baby bella mushrooms, sliced
- 2.5 teaspoons chopped fresh thyme leaves, divided
- 1 (8-inch) store-bought pizza crust
- ½ cup shredded truffle cheddar cheese
- 2 tablespoon grated Parmesan cheese
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- Make the creamy mascarpone cheese pizza base: Add the mascarpone cheese, garlic, salt and black pepper to a small bowl and mix to combine. Set aside.
- Sauté the mushrooms: Add butter and olive oil to a frying pan over medium heat. Add the sliced mushrooms, spreading them out over the pan. Let them cook for 5 minutes without disturbing them. Then, stir the mushrooms and cook for another 3 to 5 minutes, stirring occasionally, until they have cooked down and released some of their moisture. Season them with a pinch each of salt and black pepper and 2 teaspoons of fresh thyme leaves.
- Assemble the pizza: Place the pizza crust on a sheet pan. Spread the mascarpone cheese mixture over the crust leaving about a 1-inch border. Top with shredded truffle cheese, sautéed mushrooms and Parmesan cheese.
- Bake the pizza: Bake the pizza until heated through and the cheese has melted, about 8 to 9 minutes. Garnish with the remaining ½ teaspoon fresh thyme leaves. If you happen to have any fresh thyme flowers, you can garnish with those too. Allow the pizza to cool for a couple of minutes, then slice. Serve and enjoy!
