Rainbow carrots are undeniably beautiful, don’t ya think? And those purple carrots are my absolute favourite! They’re purple outside and have an orange interior. How neat is that?
I usually enjoy some sort of roasted veggies every single week. I just love them so much because they’re easy to make and taste yummy.
This roasted rainbow carrots recipe is definitely a favourite. It includes tarragon and pistachios, which really make things extra special. Tarragon is one of my favourite herbs and the pistachios add a really nice texture to the roasted carrots (which turn out slightly sweet once roasted).
Ingredients
- Rainbow carrots: I used rainbow carrots, but you could use regular orange carrots if that’s what you have on hand or prefer.
- Olive oil
- Seasoning: Kept quite simple and includes tarragon, salt and black pepper.
- Pistachios: I used store-bought roasted pistachios that I roughly chopped, but you could roast the pistachios yourself if you like.

- Toss the peeled and chopped carrots in a bowl with olive oil, dried tarragon, salt and black pepper.
- Spread the carrots out onto a parchment paper-lined sheet pan.

- Carrots: Don’t have rainbow carrots? As mentioned above, if you don’t have rainbow carrots, no worries! Rainbow carrots make things extra colourful (and fun), but your standard orange carrot would work just fine.
- Roasting: Typically, roasting the carrots can take about 25 to 35 minutes, depending on your carrots and how thick they are. Simply roast the carrots until tender or until they’ve reached your desired doneness. If they need a few minutes more, no biggie!
- Herb: If you want to mix things up, you can use another herb instead of tarragon. Thyme or rosemary works lovely here too.
- Garnish: If you want another garnish, try adding some crumbled goat cheese to the roasted carrots.

Roasted Rainbow Carrots
Ingredients
- 1.5 pounds rainbow carrots, peeled and cut into about ½-inch diagonal pieces or chunks (about 6 large carrots)
- 2 tablespoons olive oil
- 2 teaspoons dried tarragon
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped roasted pistachios
Instructions
- Preheat the oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper.
- In a large bowl, toss the prepared carrots with olive oil, dried tarragon, salt and black pepper. Spread the carrots out in a single layer onto the prepared sheet pan.
- Roast the carrots for 25 to 35 minutes or until they are fork-tender.Note: The cook time can vary depending on the thickness of the carrots. Check on them at the 25-minute mark and if you need more time, continue cooking them until they are fork-tender and done to your liking.
- Once baked, sprinkle the carrots with the chopped roasted pistachios. Serve and enjoy! Yields about 3 to 4 side servings.
