Curried Green Lentils and Kale

These Curried Green Lentils and Kale pack quite the punch in the flavour department!  Literally all the ingredients are placed in a slow cooker on low for about 6 hours and that’s it!  What you’re left with is a healthy, gluten free, vegan and super delicious recipe sure to satisfy any meat lover.  These Curried Green Lentils and Kale are perfectly yummy on their own, but it’s even better when you serve them with some grilled naan and greek yogurt.

Hey hey everyone!  What’s up?  How was your weekend?  Did ya do anything fun?  Good eats?  Tell me all about it, my friends.  Love to hear 🙂  If you read my last post, I mentioned that hubby and I were going to have a little staycation vacation last week.  We had an awesome time!  Unlike the first time we had a staycation, the weather was fantastic!  It was literally nice every single day.  We tried to relax & relax we did!  No worrying too too much about housework (well, maybe a little, lol).  We truly felt like a tourist at home.

During the week, we saw some movies, spent some time with family and friends and ate some good food.  Totally perfect in my books!  One of the movies we saw was Suicide Squad.   The critics seemed to just not like this movie, but it fared well with audience reviews.  It was just a shut your mind off, eat some buttery popcorn kind of movie and enjoy.  Know what I mean?   We also visited some really great local restaurants and  cooked a bunch of good eats at home.  I truly enjoy the blog…I mean truly and have met some wonderful people doing so, but it was lovely just getting a break from the keyboard and disconnect, know what I mean?

So onto these wicked Curried Green Lentils and Kale – the reason you’re all here, right??  You’re probably thinking ‘crazy lady, what you doing with spicy food cooked in the slow cooker in the Summer?’ aren’t ya?  Well,  they say that it’s actually good to eat spicier foods in warmer weather.  Crazy, wha?  Apparently, spicy food makes you sweat which, in turn, cools ya down.  Now that makes total sense, doesn’t it? #funfactoftheday

The great thing about green lentils is that there’s no pre-soaking involved.  Just make sure you pick them over first for rocks and give ’em a rinse before tossing in your slow cooker.  No one wants to bite into a rock, do they?  I don’t know why, but I find that funny…the potential to find rocks in your bag of lentils.  Like, rocks.  Anywho, the little things that amuse us, right?  The kale is removed from the steams, and torn into bite sized pieces.  There’s delicious aromatics like garlic, cumin and coriander and, of course, veg stock, tomatoes and coconut milk.  Sounds good, doesn’t it?

One of my original recipes (Lentil & Kale Soup) made with red lentils has a similar flavouring and is among one of the most popular recipes on my blog.  My mother-in-law loves it!  Thanks mom-in-law 😉  I’m sure you’ll also love these Curried Green Lentil and Kale.

 Don’t you just love the slow cooker?  You put everything in there, set your timer and go about your business.  I get in spurts using the slow cooker, do you?  And whenever I remember to take it out again, I wonder why I don’t use it more often.

Typically, we see slow cooker recipes in the cooler months, but I like to use mine year round.  And what’s also great about these Curried Green Lentils and Kale is that there’s no oven involved, no big heat up of the home.  I cooked these lentils for about 6 hours on low and they were just cooked…not mushy or soggy or soft…the perfect doneness, in my opinion.  If you feel you want ’em a little softer, throw them on for another hour and you’re good to go!

  1. In a slow cooker on low setting, add all ingredients except salt, lemon and cilantro. Cook for 6 -7 hours (I cooked mine for 6 hours and the lentils were just done).
  2. After six hours stir in salt and lemon juice. Garnish with cilantro or parsley. Enjoy!

    You know, I totally need to use lentils more often! I always find them delicious, but I rarely go to ’em. Gotta fix that! I love that you guys took a real staycation. Laura and I were just talking this morning about how nice it would be to take a vacation. But I’m thinking a staycation could work…especially since we could keep sending Robbie to daycare while Mom and Dad get a little R&R. Oh, and I totally support the slow cooker in the summer movement! I just pulled mine out the other day…super easy! I really need to put this recipe on our list soon…it sounds like a great summer comfort food!

      Staycations are pretty awesome! It’s all relax time, no travel…know what I mean? I use my slow cooker all the time and have really brought the pressure cooker into the mix. Great little time savers. Hope you get a chance to try the lentils. They’re great as is without any added protein, but would also be awesome with some chicken too. Comfort food for the win!

    So I made this dish the other day and it was fantastic! And SO easy to make! Seriously, I spent like 5 minutes throwing everything into the slow cooker and then just set it and forget it! There was a ton of flavor and you notice how I keep referring to the dish in the past tense? Well that’s because it’s all gone! Yup, just me and hubs destroyed the entire pot in one brief weekend 🙂 Will definitely be making again!

    So I kind of heard you were having a good week off and celebrating some birthdays 😉 Glad you two had a great relaxing week. Wishing we lived closer to each other so we could have spent some of it together eating, drinking, shopping, wearing our pizza and fries shirts. hahahaha!! Yay to Suicide Squad!!! We are going this Wednesday night to see it in IMaxx 3D and I’m totally psyched for it. I’m all about extreme action so I’m not expecting an Oscar best picture winner or anything.     I just used my crock pot for pork carnitas the other night. It’s so fantastic to put a bunch of stuff in there and come back several hours later to a cooked meal.     Nice that you had a lovely staycation with great food, family and friend, movies and good weather! We had a staycation last year and I thought it was absolutely amazing – just working in the garden, visit some local restaurants, reading a good book … just very relaxing! Curried green lentils with curly kale sounds great – especially since you can just throw everything into a slow cooker and after 6 hours you have a delicious and healthy meal! Perfect!

It did get terrible reviews, but Boy wants to see it. I’m thinking if yous sat through it I can give it a try… besides we will watch it at home so if is sucks I can always just go downstairs and mess around in the kitchen. hahaha. 🙂 Anyways, I looooove me some lentils and they don’t get enough love (even from me), so thank you for fixing that with these!
