I have been craving homemade fries lately. Well, I pretty much always crave fries, LOL. You too? With a golden brown and crispy exterior and pillowy soft interior, what’s not to love?
I decided to take some simple fries up a notch and make loaded fries. This recipe for Mediterranean fries is kinda like homemade fries meets Greek salad in the best kind of way. You end up with tons of flavour, colour and contrasting textures from the warm fries to the cool, crispy veggies and creamy, salty feta cheese. So delicious, let me tell ya!

- Fries: For the fries, you’ll need avocado oil, potatoes, salt, black pepper, garlic power and paprika.

Make the fries
Cut the cleaned potatoes into fries, pat dry, season and bake until perfectly golden brown and crispy.
Assemble the fries with toppings
Transfer the baked fries to a serving plate and top with all the delicious toppings. Serve with lemon wedges for an extra pop of flavour. Devour!
Tips
- Save time: Bake some frozen fries instead of making homemade if you want to save a bit of time.
- Set up a fry station: Having friends over? Instead of assembling the fries, have the toppings in separate dishes and let people customize their loaded fries to how they like it. So fun too!
- Adjust the toppings to taste: If you want more (or less) of a particular ingredient, feel free to adjust the quantity to how you like it.
Variations
- Wedges: Instead of fries, try homemade potato wedges for something similar but a little different.
- Protein: If you want to add some protein to these Mediterranean fries, cooked shredded chicken would be a great option. Store-bought rotisserie chicken is a wonderful time saver.
- Sauce: I topped the fries with tzatziki (which is delicious), but you can try my homemade dill yogurt sauce or plain Greek yogurt instead.
- Add extra flavour: Once the fries are baked (and before adding the toppings), toss them with a little store-bought Greek vinaigrette for extra oomph.

Mediterranean Fries
Ingredients
Homemade Baked Fries
- 2.5 tablespoons avocado oil, divided
- 2 pounds red potatoes or Yukon Gold Potatoes
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
Toppings and Serving
- 1 chili pepper, sliced (try Fresno, Serrano or your favourite variety)
- ½ bell pepper, diced (use whatever colour you like)
- ½ cup chopped tomato, Roma and grape tomatoes are great options
- ½ cup crumbled feta cheese
- ⅓ cup kalamata black olives, pitted and sliced
- ⅓ cup sliced cucumber
- ⅓ cup sliced red onion
- 1 tablespoon chopped fresh dill, or 1 teaspoon dried dill
- 1 tablespoon chopped fresh parsley
- ½ teaspoon dried oregano
- ¾ cup tzatziki sauce, or to taste (plus more for serving)
- Fresh lemon wedges, for serving
Instructions
Make the Baked Fries
- Preheat the oven to 425 degrees Fahrenheit. Grease a large sheet pan with ½ tablespoon of the avocado oil and set aside.
- Clean, peel (if desired) and cut potatoes into fries. To make fries, for each potato, slice a little off one side (the longest side). Turn the potato over so it lays on the flat end (makes things easier to cut). Slice the potato lengthwise (I like anywhere from a ¼-inch to a ½-inch thick). Next, cut those slices/slabs into fries. Place the fries into a bowl of fresh water as you are cutting them so they don't brown.
- Place the potatoes into a clean tea towel and pat dry of excess moisture. This is important because it will help the fries to crisp up nicely.
- In a dry bowl, toss the fries with the remaining 2 tablespoons of avocado oil, salt, pepper, garlic powder and paprika.
- Spread the potatoes onto the prepared sheet pan and spread them out in a single layer. Bake for 15 minutes, then remove the sheet pan from the oven and flip the fries with a spatula (again, try to ensure that the fries are in an even layer so they bake up nicely). Place the sheet pan back into the oven and continue to bake the fries for another 15 to 20 minutes or until the outside of the fries is golden brown and crispy to your liking.
- Once done, sprinkle with a little more salt, if desired.
Assemble the Mediterranean Fries
- Place the baked fries in a large serving dish (or divide them between plates). Add the chili pepper, bell pepper, tomatoes, feta cheese, black olives, cucumber, red onion, dill, parsley and oregano. Drizzle or dollop over the tzatziki. Serve with lemon wedges for squeezing over top and some more tzatziki on the side. Enjoy!
