These easy baked coffee donuts are made with espresso powder and topped with an easy chocolate peanut butter glaze. They’re fluffy, delicious and so much better than store-bought!
Let’s start off Monday with baked coffee donuts!
Making donuts at home is super easy and satisfying (especially when you bite into one).
Once you make donuts at home, there’s no turning back. You totally get to enjoy your favourite cuppa and one (or two) of these donuts while staying home in your cozy clothes! Sounds good, right?
What’s your favourite type of donut?
I know, how could you possibly have one answer for that question?
I do love these coffee donuts, but am also a huge fan of blueberry donuts, vanilla glazed donuts and, let’s not forget, carrot cake donuts!
How To Make Baked Coffee Donuts
Full details on how to make these baked donuts are in the recipe card below, but here are the basics:
Once you’ve mixed up your donut batter, pipe or spoon into a greased donut pan and bake.
After your donuts have completely cooled, you can glaze them!
Place them on a wire rack.
Add some crushed peanuts for extra flavour and some texture!
Tips for Making This Recipe
- Allow donuts to fully cool before glazing!
- If you don’t want to use crushed peanuts, try shaved chocolate or sprinkles instead.
- These baked donuts are best enjoyed when they’re freshly made for optimal freshness.
Hope you love this easy baked donut recipe as much as we do! It’s a favourite around here!
And if you’re looking for an extra indulgent treat, try with a mug of homemade hot chocolate!

Coffee Donuts (With Peanut Butter Chocolate Glaze)
Ingredients
Coffee Donuts
- 1 cup all-purpose flour, sifted
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1.5 tablespoons instant espresso powder
- ¼ cup melted unsalted butter
- ⅓ cup buttermilk, or milk
- 1 large egg
- Cooking spray, for greasing pan
Peanut Butter Chocolate Glaze
- 1 tablespoon smooth natural peanut butter
- 1 tablespoon unsalted butter, softened
- 1 tablespoon cocoa powder
- 2.5 tablespoons icing sugar
- 2 tablespoons milk, I used 2% milk fat
- pinch salt
Garnish
- 2 tablespoons chopped peanuts
Instructions
Coffee Donuts
- Preheat oven to 425 degrees Fahrenheit.
- In a bowl, whisk together the flour, sugar, baking powder, salt and instant espresso powder. Set aside.
- To flour mixture, add melted butter and buttermilk (or milk) and mix using a hand mixer (or simply a whisk) until combined. Add egg and mix until just combined.
- Spray a 6-count donut pan with cooking spray and distribute batter evenly into it (spoon or pipe in).
- Bake for 7 to 8 minutes or until a wooden toothpick or cake tester inserted in the donuts comes out clean. Don't overbake.
- Let donuts cool in the pan for about 10 minutes before removing. Allow the donuts to fully cool on a cooling rack before glazing.
Peanut Butter Chocolate Glaze
- In a small food processor, combine all ingredients and process until combined and smooth, about 1 to 2 minutes. Pour into a bowl.
Glaze the Donuts
- Once donuts are completely cool, invert donuts into glaze, one at a time, and place on a cooling rack. Sprinkle peanuts over top. You can let the glaze set for a few minutes (if you like) before digging it. Enjoy!

Oh yes! Going to make these coffee donuts to go with our coffees in the morning! They look scrumptious and I am so happy that they are guilt free 😉 . We made baked donuts just once, and this has to change! Only, I do not have a donut tin but individual donut mini pans. They work as well, so pinned for later use! Thanks!
Girl Heart Food
Thank you Nicoletta! Hope you love ’em! They are perfect dunked in coffee 😉

Girl Heart Food
Woo hoo! Sounds like a plan! Thanks so much, Sues 🙂
karrie @ Tasty Ever After
This is brilliant! Coffee donuts with a peanut butter chocolate topping? Way to make Monday kickass Dawn! I could eat all 6 of these in one sitting, before that mouse can get any of them. I’ve got a dang mouse in my kitchen too. That sucker has quite the sweet tooth and is super quick! I’ll turn my back on any kind of sweets and when I turn back around, they are all gone!!! A-hole mouse 😉
Girl Heart Food
Yay! Thanks Karrie! Monday needs a little kick ass if you ask me! You have a mouse too? Geez, those little buggers are everywhere…hehehe! XOXO

You do know you’re killing me, right?! I thought we were friends! I can’t handle that glaze….I can’t handle that coffee flavor…I can’t handle that we live so far apart!! I would do just about anything for a baker’s dozen of these babies right now! You know – I have donut pans, and now you’ve inspired me to get them out, dust them off, and have some fun! Thank you for that! Just what Monday needed! Have a great week, my friend! XOXO
Girl Heart Food
Hahaha! You are seriously making me laugh, Annie!! We are friends! And if we were closer, I’d be at your doorstep right now with a batch right out of the oven and a big pot of coffee! Have a lovely week too! XOXO
Shashi at RunninSrilankan
Haha – Dawn, I sure would’nt despise Monday if it were filled with these donuts – cos these are not just donuts but they are spiked with espresso AND glazed with a peanut butter chocolate glaze!!! SAY WHATTTTT!!! I’m getting delirious just imagining these in ma piehole with a gynormous mocha in my hand! Monday conquered for sure! Btw, baked donuts > fried donuts and homemade donuts > store bought ones – at least that’s my opinion and am sticking to it. I got me a donut pan a couple of years back and have made more donuts than I think I’ve bought since I had it – cannot wait to see what other creations come out of your donut pan, my friend! Happy Monday to ya – hope your week is wonderful xx
Girl Heart Food
Right? Wouldn’t Monday be so much better if they started with a donut or two?? I love your suggestion of having with a mocha….yes please!! I like your thinking, girl! Thanks so much! Have a wonderful week too! xo
Michelle | The Secret Ingredient Is
Oh man! Donuts + Coffee + PB + Chocolate? Hi! That is my favorite combination ever. I could go for one of these every morning – it would sure make getting out of bed worth it! And I love that they are baked making it a little more acceptable to have two…or three!
Girl Heart Food
I could go for one of these every morning too, Michelle! And definitely acceptable to eat two or three….or even the entire batch if you ask me 😉 Thanks so much!
David @ Spiced
Oh man, I couldn’t agree with you more, Dawn! Every Monday should start with donuts. It’s just a requirement. Every day starts with coffee around here, and I’m totally wishing I had a doughnut or two (or six) to dunk into my coffee this morning. I’m loving that PB Chocolate Glaze! I also know that if I was a mouse, I would want to set up shop in your kitchen, too. Haha! Happy Monday, my friend!
Girl Heart Food
Definitely a requirement 😉 Hahaha! Thanks so much, David! Have a great week too, my friend!
Gayle @ Pumpkin 'N Spice
Aren’t donut pans the best? I’m sure you’ll have tons of fun with it. And baked is way better than fried in my opinion! 🙂 These coffee donuts are just what I need for this Monday morning. And I’m with you…all Mondays should involve donuts and giant cups of coffee! Especially if they’re smothered with peanut butter and chocolate. I just want to dive right into that glaze. Sounds amazing, Dawn! Pinned, of course! Hope your week is off to a wonderful start!
Girl Heart Food
Totally the best! So much fun and I love how quickly the donuts can we whipped up! Thanks so much for the sweet comment and Pin, Gayle! Have an awesome week 🙂
