Juicy and delicious, these buffalo chicken burgers are such a fun way to mix up your next burger night! With ranch or blue cheese dressing, buffalo sauce and coleslaw, these homemade chicken burgers are such a satisfying meal any day of the week.
Craving buffalo wings but want something a little different, then why not give this recipe for buffalo chicken burgers a try?
When I think of buffalo wings, I usually associate it with carrot and celery sticks. They’re great on the side for dunking in some ranch or blue cheese dressing. Well, instead of serving those veggies on the side, they’re actually put into the chicken burger patties. Not only do the veggies add those iconic buffalo flavours, but they also add moisture.
Side note: When dressing your burger, do you prefer the coleslaw on top of the chicken burger patty or underneath? Depending on my mood, I could go either way!

Ingredients
- Ground chicken: Ground chicken is nice and lean and takes on flavours really well.
- Bread crumbs: I used plain fresh bread crumbs for this chicken burger recipe. You can typically purchase small bags of bread crumbs right alongside bread at the grocery store. If you can’t find them, you make your own by blending up some sliced sandwich bread in a food processor.
- Veggies: This recipe has a hidden veggie component. Onion, carrot and celery is blended into the ground chicken burger mixture and adds colour and flavour.
- Buffalo sauce: Use your favourite variety here. Some is used in the chicken burger mixture and some is used as a burger condiment.
- Mayonnaise: Since ground chicken is lean, I prefer to add a little regular mayonnaise, not light. This adds richness to the burgers.
- Seasoning: Garlic powder, dried dill, salt, black pepper and cayenne pepper all add lots of flavour.
- Olive oil: For frying the chicken burger patties.
- Hamburger buns: I love brioche hamburger buns, but you can use your favourite variety.
- Sauce: Once you assemble the chicken burgers, dress them with ranch or blue cheese dressing, whatever you like best.
- Coleslaw: Coleslaw adds texture, flavour and creaminess to the burgers. I simply used a store-bought coleslaw veggie mix, then added a little apple cider vinegar, mayonnaise and salt and black pepper to taste. Alternatively, you can use a store-bought coleslaw from your grocery store’s deli or make a completely homemade version. Whatever you prefer, really!
How To Make Buffalo Chicken Burgers
Here is an overview of how to make this buffalo chicken burger recipe (full details are in the recipe card below).
- To make the chicken burger patty mixture, combine ground chicken, bread crumbs, veggies, buffalo sauce, mayonnaise and seasoning in a large bowl, then mix until everything is combined.
- Form the mixture into chicken burger patties, then make a little indentation in the centre of each patty with your thumb.
- Heat some olive oil in a large frying pan and cook the burgers on each side until they’re fully cooked through.
- Assemble the chicken burgers on buns with ranch or blue cheese dressing, buffalo sauce and coleslaw. Now it’s time to dig in! Yum!
How Long Do You Have To Cook the Patties?
Cook the chicken patties until they reach a minimum internal temperature of 165 degrees Fahrenheit. Your best friend here is an instant-read meat thermometer. Insert the thermometer into the side of each patty, all the way to the centre, to check the temperature.
I find it typically takes about 10 minutes (5 minutes on each side) for the chicken burgers to be cooked through and reach the recommended internal temperature.
Serving Suggestions
For me, a burger has got to have a side. Of course, it doesn’t have to be anything fancy or complicated … far from it. Some yummy buffalo chicken burger sides are:
- Baked fries
- Crispy potato wedges
- Twice baked sweet potato
- Mac and cheese
- Simple green salad
- Soup
- Potato chips
- Veggie sticks (especially carrot and celery sticks with ranch or blue cheese dressing for dipping)
Tips and Variations
- I like to use a mini food processor to chop the onion and celery. It’s quite convenient, but you can chop with a knife if you prefer.
- When forming the chicken burger patties, it helps if your hands are a little damp (the ground chicken mixture doesn’t stick to your hands as much).
- Want to prep these burgers in advance? You totally can do that! Prep them up to one day ahead of time, then properly store then in an airtight container in the refrigerator (line the container with wax paper for easier removal later). When you are ready to cook them, simply proceed with the recipe.
- You can easily substitute ground turkey for ground chicken if that’s what you have on hand or prefer.
- If you’d rather dress your chicken burger with a simple leaf or two of lettuce instead of coleslaw, go for it! Some delicious options are Boston, romaine or iceberg lettuce.
- Make your burgers cheesy by adding a slice of melty cheese (I like cheddar) or crumbled blue cheese.

Buffalo Chicken Burgers
Ingredients
Buffalo Turkey Burgers
- 1 pound ground chicken
- ½ cup fresh bread crumbs
- ⅓ cup finely chopped yellow onion
- ⅓ cup shredded carrot
- ¼ cup finely chopped celery
- 6 tablespoons buffalo sauce, divided
- 1 tablespoon mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon dried dill (dill weed)
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon ground cayenne pepper, optional
- 2 tablespoons olive oil
- 4 hamburger buns, toasted if desired
- 4 tablespoons Ranch or blue cheese dressing, or to taste
- 1 cup coleslaw, store-bought or homemade
Instructions
- Make the chicken burgers: In a large bowl, combine the ground chicken, bread crumbs, onion, carrot, celery, 2 tablespoons of buffalo sauce, mayonnaise, garlic powder, dill, salt, black pepper and cayenne pepper (if using). Mix until everything is combined. Divide the ground chicken mixture into four chicken burger patties (mine were about 1-inch thick). Make a little indentation in the centre of each patty with your thumb (this helps them to stay a nice shape as they cook).Tip: Dampen your hands with a little water to help minimize the ground chicken sticking to them.
- Cook the chicken burgers: Heat the olive oil in a large frying pan over medium heat. Place the chicken burgers in the frying pan (with some space between each one) and cook for 5 minutes on each side or until they're fully cooked through (the internal temperature reaches 165 degrees Fahrenheit in the centre of the burgers when checked with an instant-read meat thermometer).
- Assemble the chicken burgers: Spread ranch or blue cheese dressing over the inside of the bottom buns (1 tablespoon per bottom bun but use less if you prefer). Then spread the remaining 4 tablespoons of buffalo sauce over the inside of the top buns (1 tablespoon per top bun but use less if you prefer). Place a chicken burger patty on the bottom bun, then top with coleslaw (about ¼ cup per burger). Top each with their top bun to form the burgers. Enjoy!
