Black Bean and Sweet Potato Soup with Avocado cilantro Crema

This Black Bean and Sweet Potato Soup with Avocado Cilantro Crema packs all kinds of flavour in one little bowl.  It’s made with simple ingredients like black beans and sweet potato, of course, and spiced up with smoky chipotle peppers.  The avocado crema adds a pretty touch, but does more than that.  The creaminess of the crema balances with the smokiness of the chipotle and it’s just a match made in heaven.  This one will warm ya right up on the coldest of days.

Hey guys!  How was your weekend?  So, as usual around here, the weather forecasters predicted a storm of all storms – blizzard. But, as per normal, we were told that the range could be anywhere from a few centimetres to a whole lot with winds gusty enough to blow the roof right off ya house (obviously, not really, but I’m trying to be dramatic here 😉 ).

Of course, everyone made their usual trip to the grocery stores to stock up because apparently no one has groceries in their home #sarcastic.  A friend and fellow food blogger, Rachelle, knows all about that.  Funny thing, though, I did run out of eggs (hangs head in shame). Do you know that I even heard that the grocery stores were getting low on stuff?!  What?  How is that even possible?  Well, we do live on an island so, technically, I guess it sorta kinda is.  I digress…… And there’s this new thing I hear people talking about that I’ve never really heard before – ‘storm chips’….making sure you’re stocked up on potato chips so you can have a big ol’ junk fest while the weather is less than stellar outside.  Ok, now you’re talking.  I’m down with that.  Does that involve chocolate?  Wine?  Yes? YES!  Let’s have a storm!!  So, chips, chocolate and wine in hand, I was all ready for whatever mother nature had to send my way.  Give ‘er as they say around here (aka bring it).

The storm was supposed to start around 4pm Friday and by the time hubby and I went to bed Friday night, there was no storm in sight.  Matter of fact, you could almost say it was a beautiful night.  When we woke up the next day, yay, storm!  Nothing wrong with that on a Saturday.  Big excuse to stay in, if you ask me.  Plus, I was armed with those chips, chocolate and wine.  Woo hoo!  Truth be told, even if the sun was beaming in the skin and birds were chirping, I’d be having my wine on Saturday…hehehe.Black Bean and Sweet Potato Soup with Avocado Cilantro Crema - girlheartfood.com

When I’m not eating potato chips, the cold weather makes we want to eat warm, comforting food.  Well, I always want to get comforting food, but that’s besides the point too.  What can I say?  I love good food.  Enter Black Bean and Sweet Potato Soup with Avocado Crema.  Last week I ate my weight in a lentil veg soup.  Loved it, but, honestly, by the time the week rolled around, I was so tired of it.  I couldn’t even eat the last teaspoon in my final bowl.  Done son.  No more.  But, I do love lentils, beans and all that good stuff (when I’m not eating storm chips, of course 😉 ).Black Bean and Sweet Potato Soup with Avocado Cilantro Crema - girlheartfood.com

One of the things that I love about this Black Bean and Sweet Potato Soup with Avocado Cilantro Crema is the toppings!  I’ve said it before, and I’ll say it again.  I love garnish.  I’m a garnish addict, if you will.  Load it up!!  This super easy, yummy soup is absolutely perfect garnished with goodies like cilantro, a squeeze (or two) of lime, feta and chili.  Plus, you can have prep done and this baby made in about half an hour.  Winner winner!

For the Avocado Cilantro Crema, you just put all the ingredients in a mini food processor, blitz up and way to go!  Nothing to it.  I put it in a little squeeze bottle so I could be all fancy pants and drizzle that goodness over the soup.  But, if you don’t wanna do that, just spoon it over the soup.  Hey, it was a Saturday snow day, I had time to wear my fancy pants 🙂Black Bean and Sweet Potato Soup with Avocado Cilantro Crema - girlheartfood.com

Instructions
Black Bean and Sweet Potato Soup
  1. In a pot over medium heat add olive oil. Add onion and cook until translucent, about 5 minutes. Add garlic, chili pepper (if using), oregano and chili powder and cook an additional minute.
  2. To onion mixture, add chipotle peppers, salt, pepper, half of the sweet potato (about 2 cups)and stock. Bring up heat a little and simmer for 5-8 minutes or until potato is tender. Add beans.
  3. Remove about 3 cups of the soup and place in a bowl and carefully blitz with an immersion blender and then place back into the pot and stir to combine. Add remaining sweet potato (about 2 cups) and grape tomatoes and simmer an additional 5-8 minutes until potato is tender. Squeeze the juice of one lime into soup and stir to combine.
Avocado Cilantro Crema
  1. In a mini food processor combine all ingredients and blend until smooth. Using a funnel, place into a squirt bottle so you can drizzle over soup. Alternatively, you can spoon over soup. Garnish with suggested garnishes, if using. Enjoy!

    Winter storms are awesome on the weekend when there’s nothing to do but eating and drink and play video games! lol! I know those storm chips because J got me a bag of them 2 Christmases ago when he went up north to visit a client. They are so good and I even wrote about them in a blog post. The best 😀 I remember you talking about the ‘storm’ chips and now around here it has evolved so that every time we have a storm, it’s not just that brand…any kind of chip or cheezie goes. The local news station even had people sending in pics of their storm food, lol!! Crazy, isn’t it??     Like Rachel said, San Diego has been pelted with hail and rains for several weeks now and it’s great. Though I do not enjoy the repairs to my fence and a leak found in a guest room window where I shoot videos. Alas, coming in from the cold to eat this would suit me just fine!     I actually love a good storm when we are cozy and warm inside, makes things a bit romantic not being able to get out… We had that two weeks ago as well, there was so much snow, which is still lingering and getting dirtier every day now (not that romantic anymore 🙂 ). This is a perfect dish for a snowy and cold day, it gets you warm from inside.

    Haha! Dude, chips, chocolate and wine is how I like to tackle storms, too. We had a bunch of ice/snow overnight, and now we have a couple of huge branches down in the yard. I’m dragging my feet to go out and shovel and clear those branches out. Maybe I’ll have some chocolate and chips (and wine!) as a way of delaying. And then maybe I’ll have some of this soup when I come back inside….because you know I’ll need something to warm me up! I love sweet potatoes in soup, and this one sounds amazing, Dawn! 🙂

    Storm chips. I do love that idea 🙂 And this soup! Looks amazing. We’re huge fans of chipotle in adobo sauce. And that avocado cilantro crema – I would go drizzle crazy on that for sure. We got these squeeze bottles from the dollar store and lemme tell you our meals have not looked the same lol! We didn’t have any storm out here though the whole weekend there was this horror-movie style fog everywhere I’m not even exaggerating! It’s kind of lifted now, still gloomy though, storm chips still appropriate I think haha. Happy Monday Dawn!

    It’s so funny how people just have to run to the grocery store when any kind of a storm is coming. Like, do they not keep any kind of food in their house? And will it really prevent you from going out for DAYS? I’m definitely not one of those people who does that, in fact, I avoid the stores as often as I can haha. Glad it wasn’t too bad for you though, Dawn! And it’s the best when it happens on the weekend and you can stay in and just relax. Sounds like you were armed with some delicious foods, too!     Who needs eggs when you have chips, chocolate and wine eh? 🙂 Peeps go cray cray over here in Atlanta when a dusting of snow is in the forecast – emptying shelves off bread and milk – and we are not even an island!
    It hasn’t been that cold here but I’ve been craving soup too – especially ones with ALL the beans – so I know I’d enjoy every last drop of this one – especially with that avocado crema! Your topping game is definitely en point!
