Winter Green Salad with Honey Dijon Vinaigrette

This easy Winter Green Salad is a tasty option for a quick lunch or side salad with dinner. Baby kale is topped with pomegranate arils, juicy clementine and crunchy Asian pear along with creamy goat cheese. The whole thing is topped with a super easy honey Dijon vinaigrette. There's a whole lot of flavours and textures in this satisfying green salad.

Ingredients

Winter Green Salad

  • 8 cups baby kale -or your favourite greens
  • 1 clementine -segments removed
  • 1/2 cup pomegranate arils
  • 1 Asian Pear -sliced
  • 1/3 cup almonds
  • 1/3 cup goat cheese -crumbled
  • 1/3 cup red onion -thinly sliced

Honey Dijon Vinaigrette

  • 3 tbsp olive oil
  • 1.5 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp red wine vinegar
  • pinch salt
  • pinch black pepper

Instructions

Winter Green Salad

  • Place baby kale in bowl and top with remaining ingredients. Toss.  Top with Honey Dijon Vinaigrette.  Enjoy!

Honey Dijon Vinaigrette

  • Place all ingredients in a smal mason jar, cover, and shake to combine.
