Skillet Berry Crisp {for two people}

This Skillet Berry Crisp is such a tasty little dessert, perfect for sharing between two people.  The base has a  combination of blueberries and blackberries. The top is buttery, crispy and delicious! Plus, it only takes about 5 minute prep! Perfect with whipped cream or ice-cream.

Ingredients

Crisp

  • 3 tbsp quick oats
  • 2 tbsp all purpose flour
  • 1 tbsp shredded unsweetened coconut
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp brown sugar
  • 2 tbsp sliced almonds
  • pinch salt
  • 3 tbsp unsalted butter -cubed and cold

Berry Filling

  • 2.5 cups fresh berries -I used combo of blueberry & blackberry
  • 1.5 tbsp cornstarch
  • 1 tsp orange zest -or lemon zest
  • 2 tbsp maple syrup
  • few mint leaves -optional, garnish

Instructions

Crisp

  • For the crisp, combine all ingredients, except butter. Stir to combine. Now, add butter to the mixture and squish into the dry ingredients with your hands so you have little pieces of buttery crumbles.

Berry Filling

  • In a bowl, stir together berries, cornstarch, zest, and maple syrup. Place in 6 inch skillet. Top with reserved crisp mixture. Bake at 375 F for 35 minutes. Garnish with mint, if using. Serve with ice cream or whipped cream. Enjoy!

Notes

  • Blackberries and blueberries were used here, but you could use whatever berries you have on hand or that you enjoy.  Just use about 2.5 cups.
  • A little maple syrup was used.  If you like things a little sweeter, add a little more to taste.
  • Orange zest was used, but lemon would work lovely too!
  • Don't have sliced almonds? Try walnuts or pecans.
  • I used one small 6 inch cast iron skillet and it generously feeds two people.
  • Place the skillet on top of a baking sheet to catch any spills should that occur.  Less mess is always a good thing!
  • Make sure the butter for the crisp topping is cubed and cold
