Peach & Chickpea Salad

Ingredients

Peach & Chickpea Salad

  • 2 cups chickpeas -about one can
  • 1 orange bell pepper -or colour of your choice, cubed
  • 1 pencil chili pepper -thinly sliced
  • 3 stalks green onion -chopped
  • 2 peaches -cubed into bite-sized pieces
  • 1/4 cup cilantro -leaves torn
  • 4 stalks asparagus -chopped

Vinaigrette

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

Peach & Chickpea Salad

  • Add all ingredients in a large bowl and stir to combine.

Vinaigrette

  • In a small mason jar, add all ingredients, cover and shake to combine. Pour over Peach & Chickpea Salad. Stir to combine.
