Black Bean and Sweet Potato Soup with Avocado Cilantro Crema

This Black Bean and Sweet Potato Soup with Avocado Cilantro Crema packs all kinds of flavour in one little bowl.  It's made with simple ingredients like black beans and sweet potato, of course, and spiced up with smoky chipotle peppers.  The avocado crema adds a pretty touch, but does more than that.  The creaminess of the crema balances with the smokiness of the chipotle and it's just a match made in heaven.  This one will warm ya right up on the coldest of days.

Black Bean and Sweet Potato Soup

  • 1 tbsp olive oil
  • 1 onion -minced
  • 4 cloves garlic -minced
  • 1 thai chili -minced, optional
  • 1 tsp oregano
  • 1/2 tbsp chili powder
  • 3 chipotle peppers in adobo sauce -or 1 tbsp chipotle powder or smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 sweet potatoes -divided and cut into small cubes (about 4 cups)
  • 2 cups grape tomatoes -halved
  • 6 cups unsalted vegetable stock
  • 2 cans black beans -rinsed and drained
  • 1 lime -juiced

Avocado Cilantro Crema

  • 1/2 avocado
  • 5 tbsp greek yogurt
  • 1 lime -juiced
  • 1 bunch cilantro -leaves and steams
  • 1/4 tsp salt
  • pinch black pepper

Suggested Garnishes

  • feta cheese -crumbled
  • lime wedges
  • cilantro


Black Bean and Sweet Potato Soup

  • In a pot over medium heat add olive oil. Add onion and cook until translucent, about 5 minutes. Add garlic, chili pepper (if using), oregano and chili powder and cook an additional minute.
  • To onion mixture, add chipotle peppers, salt, pepper, half of the sweet potato (about 2 cups) and stock. Bring up heat a little and simmer for 5-8 minutes or until potato is tender. Add beans.
  • Remove about 3 cups of the soup and place in a bowl and carefully blitz with an immersion blender and then place back into the pot and stir to combine. Add remaining sweet potato (about 2 cups) and grape tomatoes and simmer an additional 5-8 minutes until potato is tender. Squeeze the juice of one lime into soup and stir to combine.

Avocado Cilantro Crema

  • In a mini food processor combine all ingredients and blend until smooth. Using a funnel, place into a squirt bottle so you can drizzle over soup. Alternatively, you can spoon over soup. Garnish with suggested garnishes, if using. Enjoy!
