Peanut Butter Banana Bread with Nutella

Banana bread jacked.  That's how I'd describe this Peanut Butter Banana Bread with Nutella. Is there anything more perfect that chocolate + peanut butter?  And then go all Elvis-style with banana?  Nope.  Not around these parts.  Prepped in about 10 minutes, the hardest part of this recipe is waiting for this baby to bake.  Then go for it!

  • 1.5 cup all purpose flour
  • 1/2 cup oats
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup unsalted butter -at room temp
  • 3/4 cup brown sugar -packed
  • 1/2 cup peanut butter -I used natural
  • 1.5 tsp vanilla extract
  • 2 eggs -I used large
  • 3 ripe bananas -mashed well
  • 1/2 cup Nutella -melted slightly. See below.
  • Pam Baking spray -to grease pan


  • Preheat oven to 325F. In a bowl combine flour, oats, salt, cinnamon, baking powder and baking soda. Stir to combine and lay to one side.
  • In a stand mixer blend butter with sugar until smooth and fluffy, 2-3 minutes. Add peanut butter and blend an additional 1-2 minutes.
  • Add vanilla extract to stand mixer and blend until combined, 30 seconds or so. Add eggs, one at a time, until just incorporated. Add mashed banana to stand mixer and blend until combined, 1-2 minutes.
  • Grease a loaf pan with Pam (I used a 9.25 x 5.25 x 2.75 inch size). I also placed a strip of parchment paper in pan and sprayed with Pam and let it hang over sides (makes for easy loaf removal). Pour half of the batter into the pan and spread evenly. Top with Nutella and leave about 1/2 inch or so border around edge. Top with remaining batter and bake 60-65 minutes. Done when a there are no crumbs on wooden skewer when inserted into loaf. Let cool about 15 minutes before removing from pan. Enjoy!
  • Note: If desired and totally optional, you can mix about 1 tbsp. of peanut butter with 1 tbsp. of Nutella and drizzle over top of loaf.


Place Nutella in a microwave safe bowl and melt on high for about 15 seconds or so until it is slightly running and easily spreadable.
