Oven Roasted Cauliflower Recipe {Tahini Yogurt Sauce}

This simple Oven Roasted Cauliflower recipe with Tahini Yogurt Sauce is a delicious, easy side for quick weeknight dinner. It works lovely paired with chicken, fish or even in a vegetarian rice bowl!

Oven Roasted Cauliflower

  • 5 cups cauliflower -cut into florets (roughly half a head)
  • 1 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Tahini Yogurt Sauce

  • 1/3 cup greek yogurt
  • 1 tbsp tahini
  • 1 tbsp maple syrup
  • 1 tbsp vegetable stock or water -or more, depending on desired consistency of sauce
  • 1 clove garlic -finely minced
  • pinch salt
  • pinch black pepper


  • 2-3 tbsp pomegranate arils


  • Preheat oven to 450F. Toss cauliflower with oil, salt and pepper. Place on sheet pan and roast 15 minutes. Carefully remove, turn florets over, and roast an additional 10 minutes.
  • While cauliflower is roasting, make tahini yogurt sauce. Mix all ingredients together in a small bowl, whisking to combine. Drizzle over roasted cauliflower and sprinkle with pomegranate. Enjoy!
