Shepherd’s Pie with Guinness Lamb and Horseradish Mash from Me (Girl Heart Food) – lamb is browned and cooked with Guinness beer and generously topped with horseradish mash.  The whole lot is baked until bubbly and the top has delicious golden edges (my favourite part).

Oven Roasted Corned Beef Hash with Brussels Sprouts from Pinch and Swirl (pictured below and photo credit) – Using leftover corned beef, this hash is made with brussels sprouts and potatoes and then topped with an egg.  Delish for breakfast or dinner, if you ask me!

Irish Stout Stew from Tasty Ever After (pictured below & photo credit) – made with lamb, potatoes, carrots, onions and stout beer…tell me you don’t want to grab a big hunk of bread and just dunk in these deliciousness?

Guinness Braised Beef Short Ribs and Vegetables from The Kitchen Girl (pictured below & photo credit)- a one pot meal (aka my kinda meal…you too)?  This one even has butternut squash and, of course, Guinness, for one comforting dish.

Irish Fish Chowder from Caroline’s Cooking (pictured below & photo credit) – a delicious creamy chowder made with smoked and fresh haddock, salmon and mussels.

Vegan Lentil Shepherd’s Pie from Yummy Mummy Kitchen (pictured below & photo credit) – made with lentils instead of beef or lamb, this vegan shepherd’s pie is sure to satisfy vegetarians, vegans and meat lovers alike!

Instant Pot Corned Beef from Striped Spatula (pictured below & photo credit) – made using the popular Instant Pot, these corned beef would make for one hearty dinner!  Imagine leftovers on a sandwich? Yum!

Slow Cooker Colcannon Mashed Potatoes with Kale and Cabbage from Tasty Ever After (pictured below & photo credit) – creamy, buttery mash with kale and cabbage.  Makes for one awesome dish to have with a St. Patrick’s Day feast!

Stout Meatloaf with Irish Cheddar – made with pork and beef and lots of Irish cheddar, this is one juicy meatloaf!  Just look at it! Yum!

Traditional Irish Soda Bread from West Via Midwest (pictured below & photo credit) – This traditional soda bread can be made with as little as four ingredients, but you can add extra oomph with cranberries, walnuts and chocolate chips so it’s totally customizable!

    So many interesting ideas – so many things to try yet (I have tried a very few Irish recipe so far). I was going to make something special for St. Patrick’s day this year, but I couldn’t manage it. I guess the only one thing I have time for is adding some irish cream in my coffee 🙂

    St. Patrick’s Day is probably the only holiday I’ve never celebrated with the appropriate food, and I have no idea why. All of this looks oh-so-delicious! I’ve been wanting to make Colcannon for ages. I think I need to do that next week! This is a great round-up, Dawn. And now, I’m starving. Haha.
