These Shortbread Cookies with White Chocolate and Candy Cane are so easy to make, super buttery and rich, and the perfect accompaniment to Santa’s milk on Christmas eve.  Plus, they freeze really well, so you can make ’em now and enjoy later.  You have lots to do in preparation for Christmas and if you can cross one thing off your list, that’s one less thing you are gonna have to do later.  Just a warning – you may just wanna go ahead and double the batch.  Yes, they are that good.

Hi everyone!  How was your weekend?  Making any progress with the holiday preparations?  This past weekend, I felt like a got a bunch of things accomplished.  I even ventured to the mall for, like, 5 seconds to get something and I headed back out.  It was just a tad cray cray in there and this chicka does not like crowds.  We got our outside decorations up, some stuff inside, wrapped gifts and did a bunch of baking…not to mention watched ‘Its a Wonderful Life.’  So, it definitely was a holiday filled weekend🎁 So fun!  And what’s the holidays without cookies?

For as long as I can remember I have made these shortbread cookies and it’s always at Christmas. Over the years, I have adapted it slightly, but only through how they are decorated –   maybe simply with a cherry on top, one type of chocolate here, sprinkles there, ya know?  But, the base of these cookies are always the same.  Why mess with a good thing, right?  This recipe is only slightly adapted from Makegood.ca.  I love these cookies so much and even wondered the other day why I don’t make them more often.  I probably should ’cause they are so good, but, then again, it’s nice knowing that they are special and just for Christmas, ya know?  Plus, it would be too tempting to have these around all the time…I wouldn’t be able to control myself🍪

I never ever just make one batch of these cookies.  I  actually usually triple it.  Yes, triple.  I keep some for hubby and I over Christmas and gift the rest.  For the past few years now as part of my mom’s, mom-in-laws and nan’s gift, I prepare ‘baskets.’  In those baskets it’s usually a combination of homemade and bought things.  Typically, I include my own baked goods such as these cookies and cake, as well as a nice variety of cheese or maple syrup, and perhaps things like a candle and maybe an ornament.  I actually really enjoy preparing these baskets and it’s one of my favourite things to do in preparation for the holidays.  Plus, these baskets are always really well received.  So much better than anything you can buy from a store, right?

I would make these for my father in law.  He has since passed, but he absolutely loved these cookies and I definitely think of him every time I make them.  He made the best cheese sandwiches.  Not grilled cheese.  Just a plain untoasted sandwich with butter and cheese and it was always the best.  He was such a sweet man.

After you have the ingredients combined for these cookies, an important step is to wrap the dough in plastic wrap and place it in the fridge for a little bit, just to make it easier to handle (there’s lots of butter in there).  After that, you basically just roll the dough into little balls, place on a parchment lined baking sheet, flatten and bake until they have the tiniest bit of colour.  You then let them cool on a wire rack and decorate to your heart’s content.  These cookies are perfectly delicious on their own as is (maybe with a nice cup of tea or glass of cold milk), but I love to decorate them…that’s the fun part, isn’t it?

This time, I used melted white chocolate and then sprinkled with crushed candy cane, well, cause Christmas!  From there, I usually place in the freezer for a few minutes to speed up the hardening of the chocolate and remove and enjoy.  If you want to store them in a container and freeze for later, that would be awesome too.  They freeze super super well.

Instructions
  1. In a mixer combine corn starch, icing sugar, flour and salt. Add butter and blend until combined and dough is soft. Form into a ball and wrap in plastic wrap and place in refrigerator for 20-30 minutes until dough is easier to handle.
  2. Remove dough from refrigerator and shape into 1 inch balls. Place on baking sheet covered in parchment paper, about 1 inch apart. Flatten balls to about 1/4 inch thick with your hand or floured fork.
  3. Preheat oven to 300F and bake 18-20 minutes or until edges or only very lightly golden. Cool on wire rack. Once cooled, dip in white chocolate and sprinkle with candy cane.
  4. Place on wax paper lined sheet pan and let chocolate harden completely. To speed cooling/hardening of chocolate, place in freezer for about 10 minutes. Remove and enjoy!
Recipe Notes

This recipe is slightly adapted from Makegood.ca.

You can melt the white chocolate in a microwave safe bowl, heating for about 30 seconds or so at a time, stirring and mixing and heating for another 30 seconds until just melted.

    Dawn, these look simply wonderful – so incredibly melt-in-your-mouth drooliciously wonderful! I totally understand wanting to keep these as a special Christmas treat – a tradition of sorts. Simply lovely!
    Btw, you are a brave woman to venture into the mall – unfortunately, my daughter works in one and around this time of the year, she asks me to drive her instead of driving herself as parking is nutso and so, I venture there to drop her off and pick her up – I usually stay outside – but one time I was early and ventured in and wish I had Inspector Gadgets car so I could soar above everyone as it was jam packed! I live in Suburbia and the mall is THE place to be – even more so when December comes around!

    Those look so good Dawn! They look so festive too! I could totally see us tripling the recipe also. Holiday baking is so much fun isn’t it? We love giving away food gifts at Christmas. Most people already have everything but everyone has to eat as what I think. My favourite treats would be cookies and cocktails though is cocktails considered a treat? Haha. Have a lovely day!

    Oh, I totally hear ya about making way too many cookies. I do that during the holidays, too! But there’s always neighbors and friends (and for me, the curling club) that appreciate the extra sweet treats. I’m a HUGE sucker for shortbread cookies, and I know these would be dangerous around me. Dangerous as in I’d eat the whole darned batch…and then head into the 2nd batch. 🙂 Oh, and we did some Christmas work this past weekend, too. Got a ton of shopping down (in record speed I might add…) and then got some more decorations put up. Almost done with the decorating…just one more box of ornaments to hang!

Can’t believe that you already managed to prepare so much for the festive season. My to-do list seems to get longer by the day – no idea how that works 🙂 I still need to bake my favourite holiday treat – my Great Grandma’s biscuits, I always make a ton of them and they always just disappear.
