Looking for a satisfying, quick dinner that’s perfect for meatless Monday?  Look no further than this Creamy Blue Cheese and Mushroom Pasta.  A touch of heavy cream is combined with delicious blue cheese and sautéed mushrooms and then tossed with pasta for a hearty dinner.

When I received this cheese, I was beyond excited.  Yes, cheese excites me.  I could not wait to dig into it.  It was sitting in my fridge for a couple of days and I could not wait any longer. Torture.  Torture, I tells ya. Every time I opened the door, it was just starring at me saying ‘Eat me, Dawn. Come on, you know you want me.’  So, being a nice person, who am I to say ‘no’ to cheese?  So, I gave in.  Yeap.  Twist my arm.  I took this baby out of the fridge and cut into it.  OMG.  The heavens opened. Angels started to sing.  Being a bit dramatic, but all true (in ma head).  Anywho, I cut into the wax surrounding the cheese that was protecting it like a suit of armour.  I immediately swiped my finger over the knife and took at taste.  I swear, I got goose bumps.  It was creamy, a bit salty and honestly not too overpowering.  Sooooo good!!  Then I did a silly thing #StoryOfMyLife—>

Hubby was outside cleaning the winter tires before storing them away, blasting them with the pressure washer.  I ran out of the house wearing yoga pants, hair in my Saturday mess, slippers on (no shoes) with knife in hand (neighbours must have thought I was crazy if they saw me) and gave him a taste.  Side note—> DO NOT sneak behind someone when they can’t hear you with knife in hand.  Just sayin’.  NOT, I repeat, NOT, a good idea. 

So, with that behind us, onto this delicious recipe now, shall we?  When I was recently asked what my favourite cheese is, I could not (and still can’t) give just one single answer.  I mean, how could I?  It’s basically impossible.  But, one thing is for sure – blue cheese is at the tippity top of the list.  Oh blue cheese, how I love thee.  I love your funk, your texture and look.  Blue cheese, you got it goin’ on.  Creamy Blue Cheese and Mushroom Pasta {vegetarian, under 30 minutes} -

For this recipe, I used Dragon’s Breath Blue Cheese. It’s an award winning soft blue cheese created in 2002 by That Dutchman’s Cheese Farm, a family owned artisan fromagerie located on the shore of the Bay of Fundy, Nova Scotia.  When you cut through the wax surrounding this cheese, you are presented with a strong (yet delicious) aroma and all you’re going to want to do is dig in.  Depending on how long its aged, it’s texture can range from soft and creamy to hard and buttery.  All I know is that this cheese is fantastic! I was so impressed at the quality and taste of this blue cheese and now it’s my new favourite blue. Dragon’s Breath has many applications, ranging from desserts to cheese boards to pastas (like this dish)….or eating straight up (which is a personal preference of mine).

Dragon’s Breath pairs lovely with port but, not being the biggest fan of port, I opted to pair this Creamy Blue Cheese and Mushroom Pasta with a hefty, rich cabernet sauvignon. Creamy Blue Cheese and Mushroom Pasta {vegetarian, under 30 minutes} -

The fact that this cheese is so creamy dreamy, it is perfect for this recipe. This Creamy Blue Cheese and Mushroom Pasta can be prepped and made in under 30 minutes.  So, not only is this recipe perfect for Meatless Monday, it’s also an easy, super satisfying recipe for busy weeknights and I’m all about that.  Creamy Blue Cheese and Mushroom Pasta {vegetarian, under 30 minutes} -

To prepare this recipe, you just sauté some shallot (or onion) with garlic, add mushrooms, cream and cheese and toss with the cooked pasta.  I love serving this with some grilled bread brushed with olive oil and garlic.  Always a winner!Creamy Blue Cheese and Mushroom Pasta {vegetarian, under 30 minutes} -

If you are looking for another super yummy way to use this cheese I was introduced to a blue cheese stuffed olive martini from my good friend, Karrie, from Tasty Ever After.  Just stuff the olives with blue cheese and garnish your favourite James Bond style martini.  Just right for cocktails on the weekend!

Creamy Blue Cheese and Mushroom Pasta

Creamy Blue Cheese and Mushroom Pasta {vegetarian, under 30 minutes} -
  1. In a large sautee pan over medium low heat add olive oil. Add shallot and cook until translucent, about 5 minutes. Add garlic and cook an additional minute. Meanwhile, in a large pot of boiling salted water, cook pasta according to package instructions to al dente (linguine takes about 8 minutes). Drain, reserving about 1/4 cup of pasta water.
  2. To pan, add mushrooms and cook until softened and they have released some of their moisture, about 5-10 minutes. Season with salt, black pepper and chili flakes.
  3. To pan, add blue cheese and cream, stirring to combine. Add cooked pasta & 1/4 cup of the reserved pasta water to pan and stir to incorporate sauce with pasta. Serve in warmed bowls and garnish with blue cheese (about 1 tbsp, crumbled, per bowl) and parsley. Enjoy!

    I’m a bad foodie blogger bff because it’s taken me a week to see this post! That pasta looks so good!!! I love blue cheese and mushrooms together, then combine that in a creamy sauce and some pasta? OMG, love it! I need to find that dragon’s breath cheese here too. One day we’ll get together and drink dirty martinis with blue cheese olives while eatting a big bowl of this pasta 🙂

    oh wow, my uncle dan would love love love this recipe. he is the guy that gulps up the blue cheese on the cheese board in one swoop! i love the family owned artisanal tidbit and I might try to make those recommended olives stuffed with blue cheese.

    oh yes, cheese definitely excites me. (whenever i’m at a grocery store and see a cheese sample, i stop whatever i’m doing and go towards the light; i mean the cheese). this pasta sounds delicious, though i’m curious how the cheese got its “dragon’s breath” moniker (is it spicy and fiery like i’d imagine dragon flames to be?! i’m kind of betting no lol).

    Dawn – haha! I so love your love for cheese – my daughter and mom would agree with you that every time they have tried cheese – any cheese “The heavens opened. Angels started to sing.” no kidding! Though, they are not as good at sharing…and, the reason they might run around with a knife is to deter anyone from trying THEIR cheese!
