These Baked Coconut and Lemon Donuts are packed to the max with coconut and zesty lemon! There’s three forms of coconut in these bad boys – coconut oil, shredded coconut and coconut extract.  Plus, there’s lots of fresh lemon zest and juice.  Who needs the coffee shop when you can have these? 

Hey hey!  How’s it going? I have to ask you a question.  Do those little Girl Guides (similar group to Girl Scouts in the US) get you every.single.time?  I swear, I think they are little masterminds.  So, I have, like, 3 boxes of cookies in my pantry now.  Three!  I never have 3 boxes of cookies at one time in my pantry.  Those little buggers are sneaky.  A little girl came to the house the other day selling them.  Hubby answered the door and there she stood, only a little peck of a thing all dressed up in her little suit, proudly holding up a box of cookies and asked if he wanted to buy.  How could you possibly say no?!  Then,  I came home the other day and there’s another box on the counter. ‘Where did these come from?’ I ask hubby.  Yeap, they got him again.  Then, I was at the grocery store and as I was leaving there was about a dozen (no lie) of these little girls on the way out totally laser eyeing me.  I couldn’t just walk past them like a cold hearted person, could I?  Nope.   ‘What flavours do you have’ I ask.  Got me again.  These Girl Guides are starting to become a problem to my waist line.  I’m thinking in the future, I’ll just hand them over my money and tell ’em to keep the dang cookies, lol.  But, Girl Guides, I’m onto you.

Anyway, on top of cookies, why not make donuts?  Sounds like a sensible thing to do, right?  Yeah, no. But, in for a penny, in for a pound, as they say.  Plus, I totally promised you guys that another donut recipe was on its way.

It truly amazes me how I lived all my life without a donut pan.  For reals.  I can’t believe how easy it is to whip up a fresh batch of donuts.  Like, under a half hour you’ll have these prepped, baked, rested, glazed and in your belly…and then debating if you should make more, like, right then and there.  Plus, you know every single ingredient in there.  Want more lemon zest?  Go for it.  Want less?  You can have that too.  There’s no turning back for me now and you’re going to love these as much as I do.

There’s no surprise that I’m using lemon and coconut in my baking again.  I can’t get enough of that stuff as indicated by here, here, here, and here…..oh and here.  I may have a little obsession with lemon and coconut and, I swear, it has nothing to do with the giant bag of lemons I typically pick up at my local Costco.

I always have lemons in my fridge.  Along with mushrooms.  Garlic and onions are always in my pantry as well as dried and canned beans and tomatoes.  What are some staples that you have got to have at all times?

These donuts are packed with coconut and lemon in both the cake base and the glaze.  And while these are resting after they are baked, your glaze takes seconds to make.  Just combine all the ingredients, stir until smooth and done!

Dunk those babies into the glaze and try not to devour every single one. And if you did, no shame.  That are, after all, baked.  Do you tell yourself little things like that to feel better?  I’ll assume you said yes like me.  I know you wouldn’t leave a girl hangin’.

So next time you have a hankering for something sweet, whip these babies up.  Your belly will thank you.

Prep Time 5 minutes
Cook Time 8-9 minuts
Passive Time 10 minutes

Baked Coconut and Lemon Donuts -
Coconut Lemon Donuts
  1. Preheat oven to 400F. In a bowl combine flour, sugar, baking powder, salt, lemon zest and shredded coconut. Stir to combine. Lay to one side.
  2. In another bowl (or using stand mixer), add coconut oil, coconut milk and stir to combine. Add egg and mix until just combined. Add vanilla extract and mix to combine. Add flour mixture and mix until just combined.
  3. Spray 6 unit donut pan with Pam and distribute batter evenly. Bake for 8-9 minutes. Let cool in pan about 10 minutes before removing and glazing.
Coconut Lemon Glaze
  1. In a small bowl, combine all ingredients and stir until combined and smooth. Invert each donut in there to get glaze on top. Best enjoyed immediately!

    Hahaha – Dawn – I try my best to use another entrance when I see those girl scout “buggers” (LOVE that word btw – I think we need to make that a trending hashtag!!!) – so far none have shown up on my door – but if they did, I would probably give in like your hubs did – especially if they were touting these donuts! In my opinion, these homemade donuts are far, far more delightful than girl scout cookies (yup, I went there) and I’d rather have a stack of these in my kitchen any day! Loving ALL that coconut combined with lemon – so perfect for summer eh?!

    I’m so far behind commenting on recipes so I totally missed these donuts but WOW!!! I LOVE coconut and lemon flavors so this is my kind of donut. J doesn’t like coconut but he loves lemon. I may have to leave out the coconut and add extra lemon when I make them for him 🙂

    Haha, my husband totally got suckered into buying a bunch too – I sent them with him to work and kept only one box in the house. Cause otherwise, I’d be snacking on them day and night!
    Also, I’m the same way about my donut pan – adore the thing and don’t quite know how I managed to live without one for so long! I was totally missing out!     I saw these bad boys on Instagram last night, and I couldn’t wait to get over and see the post this morning! I love the lemon + coconut combo, and these donuts sound amazing. I love the trifecta of coconut you’ve got going on in there! Now as far as Girl Scout cookies, I get it. (I totally chuckled at your comment about just taking your money but keeping the cookies.) We used to seek out the Girl Scouts every year to stockpile cookies throughout the next several months. But once I started blogging, we always have sweets in the freezer now…so we cut back our Girl Scout cookie hoarding. (Yes, hoarding!) But we still end up with a couple of boxes every year.     These donuts were made for me! Two of my all time favourite flavours in one. So good. Love that it’s coconut 3-ways too! And funny you should mention the Girl Guides – we actually kind of *avoid* them. We saw them at the mall last week from afar and we changed our route just so we won’t bump into them we’re sooo badddd HAHA. Maybe it’s out of fear too lol. You’re right they’re so hard to say no.     Awesome combo! I love coconut and have never tried it with lemon, but cannot see how it can taste anything other than great. Also starting to seriously consider a donut pan after ovserving your creations Dawn! If I made these Chris would probably make me a beer of my choice. He is crazy about lemony desserts. I had to have a serious talk a few years ago with his pastry chef who was feeding him too many of them and Chris’ triglyceride levels were in the stratosphere:)

    Hahahaha. I have a secret maneuver for the girl scouts here. Don’t make eye contact. Like, say you are walking into (or leaving) the grocery store – walk and when you get close start fumbling around in your purse like you are looking for your grocery list or car keys, a pen. WHATEVER. Just don’t make eye contact and look busy. They won’t say a thing because they are polite and don’t want to disturb you. I’m an evil genius.     I avoid the grocery store every February just so I don’t have to say no to the Girl Scouts. They really are sneaky!     Haha cookies and doughnuts… All you really need in life!! My husband is the biggest sucker… One time I heard the doorbell ring and by the time I got downstairs, there were 8 boxes of cookies on my counter. He claimed he didn’t have change, so he just spent all the money he had. I can’t say I was too upset though 🙂 When those girls start selling doughnuts like these ones, I’ll really be in trouble!!

    I don’t think we have girl guides in the U.S. but we sure to have those Girl Scouts, and I’m a sucker for those cookies every time! They never last long in my house, and I should probably steer clear. I bought three boxes a few months ago, and I think I ate more cookies than my husband, yikes! Donuts are also just as dangerous, but so delicious! Especially the homemade kind. These coconut and lemon donuts sound so good! I know my husband would adore these with all of that coconut.
