Peach, Strawberry and Lime ice Pops

Hey everyone! How was your weekend? Remember in my last post I was talking about my fear of pressure cookers growing up and now hubby & I have one? Well, I decided to break that baby out on Saturday. I seared off a roast of beef and threw in it the pressure cooker with some tomatoes and other goodies and less than an hour later we were left with the tastiest beef ever! Seriously, so good. I shredded it and we had tacos. Perfect Saturday night eats, don’t ya think? So now I’m exciting to thing what I’m gonna make next. Do you know that ‘Masterchef’ is back on television for another season? That’s the show where home cooks compete through a series of cooking challenges to win the title of ‘Masterchef.’ That’s another great food related show that hubby & I watch. Fellow foodies – would you ever want to audition for such a show? It’s crazy some of the dishes these home cooks come up with. I’d love to be behind the scenes to see how it all runs.
So onto the recipe, right? So, I decided to jump on the ice pop train and make my own version of these babies – Peach, Strawberry and Lime Ice Pops! It seems that ice pops are around everywhere these days. Hubby and I were recently at Winner’s and I came across the ice pop molds and I knew I had to get them. I’m sure hubby was thinking they would just sit at the back of the cupboard collecting dust, gone into the abyss, and never to be seen again. But nope! Well, looky looky, here’s some ice pops 😀
I remember having popsicles as a kid, specifically in the summertime. I’d probably take $2 to the local convenience store and get a little lunch. I’d ride my bike to the store with my friends, pick out some treats and plop down somewhere to enjoy. My absolute favourite flavour was pineapple (well, probably still is), followed by orange. What was your favourite?
What I love about this recipe is that it uses the season’s best. Take what’s in season, throw it in a blender with some honey, vanilla extract and yogurt and way to go. All you have to do then is just have the patience to wait until they are set. It’s basically like a frozen smoothie, in my opinion.
I had waaaay more peaches in the refrigerator than two people can possibly eat, so it was the perfect fruit to use in these ice pops. Plus, peaches are awesome this time of year, so that never hurts 😉 It’s best to use super ripe peaches and strawberries, if possible ’cause they are the sweetest. First when I made these, I used a food processor, which is lovely, but ended up with a hot mess because there was too much liquid and when I took the bowl from the unit, there was a mess everywhere, so I suggest using your blender to blitz everything together.
I poured the ice pop mixture through a funnel into the ice pop molds to minimize any mess and just put in the freezer for a few hours. When ready to eat, just run some hot water over the molds and they should release easily.
These Peach, Strawberry and Lime Ice Pops are not creamy like a fudgesicle, but rather light and refreshing like a popsicle or Mr. Freeze (remember those?) They have such a fresh flavour and the lime really comes through. If you want less of a lime flavour, omit the lime zest and just use the juice.
After success with these Peach Strawberry and Lime Ice Pops, my little brain was going on all the possible combinations and, then realized, that it is pretty much limitless! Peach, Strawberry and Lime Ice Pops
- 3 cups peaches -peeled & chopped (roughly 12)
- 1.5 cups strawberries -steams removed
- 1 lime -zest & juice
- 6 tbsp honey
- 1.5 tsp vanilla extract
- 1 cup greek yogurt
- Combine all ingredients in a blender until smooth and combined, about 2 minutes.
- Using a funnel (or if you have a steady hand simply pour from blender), pour mixture into ice pop molds and freeze for about 4 hours or until set.
- To remove pops from molds, run molds under hot water for just a few seconds at a time. Enjoy!
