Hey everyone! How’s your week going? Boy, this cold weather is really getting to me! Cray cray how the cold/dry weather affects your hair and skin. Static in my hair, skin parched! I’ve been layering on the moisturizer and lip balm like there’s no tomorrow. On a positive note, I love all the cozy clothes and types of comfort food cooking (like here, here and here) that this time of year brings. I honestly live in my leggings, woolly socks and oversized sweaters on the weekend. Love them. I’ve realized that I have an ever growing pile of leggings and comfy socks in every pattern and colour of the rainbow. Don’t judge. Maybe, I’m like a bear and hibernate for the Winter. Hey, it’s not so bad. Highly recommended, lol!!
Despite my utter love for all things comfort, for the most part I try to be sensible about my eating during the week (like this recipe for breakfast) and then on the weekend I’ll make something a little more indulgent. I’m sure that you’ve probably heard of overnight oats before. If not, you’ve been missing out! No worries, I got you covered 😉 ! These Overnight Coconut, Cranberry & Chocolate Oats are the bomb.com! They are unbelievably easy to make and really delicious & nutritious! You basically just throw the ingredients in a bowl before bed and wake up to breakfast made. I’ve found that even give this a few hours, it’s pretty much ready to eat. As you can probably tell, I may have had a little taste test a tad early… I couldn’t help myself. Quality control, right? Hehehe!!
It’s funny ’cause when the ingredients are added together, you think ‘how in the world is this ever going to thicken?’ It’s a lot of liquid and then, magically, it does. The key ingredient in this recipe is the chia seeds which absorb a lot of liquid, thereby making a perfect pudding-ish texture. Plus, they are super good for you ’cause they contain lots of fiber and protein. I did use coconut milk in this recipe to really amp up the coconut flavour. This isn’t ‘canned’ coconut milk. You can typically find it in the organic section of your supermarket. However, you can use whatever milk you have on hand (regular, almond) or whatever floats your boat 🙂
I love to layer in little mason jars with Greek yogurt and whatever fruit I have in the refrigerator (today it was orange segments) and topped off with chocolate shavings and an extra drizzle of agave. You really can’t go wrong. This is a great recipe to make on a Sunday evening and eat throughout the week. A great little breakfast or snack for sure! Overnight Coconut, Cranberry & Chocolate Oats
- 2 cups coconut milk -not 'canned' coconut milk (or regular milk)
- 1 tbsp agave -if like sweeter, can add another 1 tbsp (or honey)
- 3/4 cup quick oats
- 1 tbsp ground flax
- 3 tbsp chia seeds
- 1/4 cup shredded unsweetened coconut
- 1/4 cup dried cranberries
- 1 oz semi-sweet chocolate -about 2 tbsp, chopped
- fresh fruit -berries, orange, apple
- seeds -pumpkin seeds are awesome
- chocolate shavings
- Add milk and agave to medium sized bowl. Stir
- Add remaining ingredients. Stir to combine.
- Cover with plastic wrap and refrigerate overnight or at least a few hours.
- Enjoy on it's own or layer with yogurt and your favourite fruit!
