Hey everyone! My mind is blown that April has now passed us and we’re into May. The other day, I saw something online that said there’s only 35 Mondays ’til Christmas. Too soon, right? I think so. Though, the year is going by fast! So happy to be getting a little warmer weather and having the opportunity to go outside with just a light jacket. This year we are attempting to grow cauliflower…fingers crossed! Anywho, April was a busy month. Let’s get on with our Monthly Round up and Favourites April 2018, shall we?
Recipes I’ve Shared This Month
Easter Cupcakes – These vanilla based cupcakes have a simple buttercream and are topped with toasted shredded coconut and candy. Though they are ‘Easter’ they are delicious any day if you ask me 😉
Smoky Vegan Mac n Cheese – This recipe was from a book review I did, Great Vegan BBQ Without A Grill. This mac is creamy from a cauliflower cashew based sauce – such a yummy twist on a classic dish.
Lentil and Kale Soup – This was a re-do of one of my very first recipes! It’s simple to whip up, budget friendly and super tasty.
Southwest Chicken Salad – One of my all time favourite salads right here. It’s made in about 10 minutes because it uses leftover rotisserie chicken. And that chipotle dressing? So good!
Black Bean and Sweet Potato Tacos – These vegan tacos are from a book review that I did, The Truly Healthy Vegetarian. They’re a delicious way to mix up the ol’ Taco Tuesday menu!
20 Comforting Soup and Sandwich Recipe Round-up – A round-up of some recipes from Girl Heart Food and fellow food bloggers. So many options for such a classic combo!
No Bake Chocolate Chai Protein Balls – Like a chocolate bar, only better. These babies are amped up with protein powder to give them a lil’ somethin’ somethin’. The hardest part is stopping at one.
Chickpea Cauliflower Curry – Made in one pot in about 30 minutes, this one is hearty, tasty and easy on the wallet.

Margarita Cupcakes with Tequila Cointreau Frosting from The Itsy Bitsy Kitchen (pictured below & photo credit) – Cinco de Mayo is this coming weekend and what better way to celebrate than with this cupcake? It’s like a cocktail and dessert all in one!

- The Terror on AMC with executive producer Ridley Scott (known for the Alien movies). It’s a kinda scary drama of the Royal Navy based on a book of the same name. Basically, two ships in search of the Northwest passage get stuck in the ice and all sorts of crazy things start happening. I’ll leave it there.
- Into The Badlands Season 3 on AMC. You may have heard me talk about previous seasons of this one before. It’s an over-the-top martial arts show and it’ll keep ya interested right through each episode.
- Something a little lighter – Roseanne is back on ABC with the original cast and more. Such a throw back and you’ll probably have a chuckle here and there.
Love having music on in the background, especially on the weekend when hubby and I are cooking. I really enjoy Never Be The Same by Camila Cabello. I’ve heard it about 1 million times now so the countdown might be on for that one, lol.
Another catchy little tune is No Excuses my Meghan Trainor. It’s a good one for blasting while in the car 😉
But you know what’s really been turning my crank this past little while? I searched for a Chris Sheppard’s 90’s playlist on Spotify and, boy, was I glad I did. So many songs that brings back so many memories…nostalgia, am I right??
You guys, I’m obsessed with those Funko Pops!! Are you familiar with them? They’re basically collectible vinyl toys. You can find them based on your favourite tv or movie characters. How cute is this Bob Ross Deadpool one…oh, and this Care Bear one? And let’s not forget Mr. Rogers! Geeking out, right??
Do you know your wine IQ? Ha! Buzz Feed Food has a wine IQ test and obviously I had to take it 😉 I scored 10/15 – not too bad, but I better brush up on my wine knowledge….ya know, for learning purposes, lol.
