Recently, hubby had a work trip to Texas for a couple of days.  I always love to ask if he had any memorable meals or dishes.  I’m all about that food, lol!!  Tell me.  Tell me in detail!!  Yum!  During his trip he said that black beans were a really common dish that was served and he loved them. Both of us being big fans of beans, I knew I had to give it a go and try to make ’em myself!

I’ve made baked beans before (‘Hard to Resist Seconds Baked Beans’) and they are completely delicious, but these Smoky Baked Black Beans are different altogether. This recipe is a little more simpler and has a different flavour profile than my other baked bean recipe – it has more of a spicy/smoky flavour from the chipotle pepper flakes and chipotle powder, it’s not tomato based and uses a different type of bean.  The variety of beans (Black Turtle Beans) used in this recipe is really high in fibre, which makes it extra nutritious for you (and who doesn’t like/need a little extra fibre in their diet?) And like most bean recipes, it’s also really inexpensive to make…some beans and a few other ingredients yields quite a large amount.  Though this recipe is quite humble and most definitely not fancy, it is pretty versatile; you can enjoy with just about any meal from breakfast to dinner.  On their own they are awesome, but they are also great with grits and an over easy egg sprinkled with cilantro and crumbled feta…nom nom nom.

Turkey, Sausage & Black Bean Chili

Who doesn’t love a good ‘ol pot of Turkey, Sausage & Black Bean Chili? It’s absolutely perfect on its own, but can totally make other things even better.  Take fries, for instance…throw some chill on fries with cheese and – BOOM! – chili cheese fries!  You know what else works?  Leftover chili in the morning with a fried egg on top.  Yeap! Breakfast.  Counting the garnishes and side of cornbread, it’s basically all four food groups in one meal and who’s going to complain about that?  Yummy & practical? Love it :)!

Chili is definitely something I make regularly.  I can vary the meat or veg slightly (depending what I have on hand), but it is guaranteed to always be delicious. Just this past weekend I was doing some work outside, it was cold out and to come in to this warm bowl of goodness was awesome.  I made some corn bread to go along with…actually Cheesy Skillet Cornbread, cause how can you have chili without cornbread?  Well, you can, but it is some much better when you got some bread to dunk into.  And, whoever said no to some carbs on the side?  Ummmm….not me :)!  The recipe for the cornbread can be found here and once you’ve made this recipe there’s no going back!

‘Hard to Resist Seconds’ Baked Beans

Baked beans is definitely a dish that is perfect all year round!  Just think about it – they are great in the Winter after coming in from outside; they warm ya up and fill your belly.  In the Summer, who doesn’t love baked beans sitting around a campfire? They are perfect on their own or as a side. Baked beans has it going on – well, you know, as far as beans goes 🙂

Lately, hubby & I have enjoyed a side of beans with barbecued steak for super.  Have a glass of wine with it and that’s fine dining I tell ya! And, they are healthy for you too.  Just forget about the bacon, because the fibre in the beans totally outweighs the calories in the bacon, right?

My recipe is  easy and the results are sure to have people coming back for seconds.  As an added bonus, they freeze really well so you can make a batch and have ready to go when you just don’t have the time to cook.
