Hey everyone!  Happy Taco Tuesday!  Figured it was only fitting to bring you this delicious recipe today – Oven Baked Fish Tacos with Smoky Chipotle Sauce!

These tacos are unreal.  The sauce is the bomb dot com.  The think I could honestly tip the entire batch of sauce on my head & pour it into my pie hole and call it a day.  Seriously.  But that would be waaaay inappropriate and then there would  be  none left for the tacos and that would be a shame.

How’s your week going so far?  So, it’s officially Spring!  We are in the last full week of March and I don’t know where the time is flying.  Any upcoming Easter plans?  No big ones for me; I just know for sure that I’m gonna be eating a whole lot of turkey and Easter eggies (don’t you just love those?) I remember years ago before hubby & I were married and we were dating, he decided to make some guacamole.  Let me tell you, I tried it and I thought that it was the grossest thing ever.  I really did not like it at all!  I know. Crazy, isn’t it?!  To think about that now, I can’t believe it!  These days I absolutely love guacamole and just avocados, in general.  We always have avocados in the fridge.  Always. They are a definite staple in our household, right alongside milk and eggs.  I’ve never, but I bet I could eat an avocado like an apple I love it that much.

Turkey, Sausage & Black Bean Chili

Who doesn’t love a good ‘ol pot of Turkey, Sausage & Black Bean Chili? It’s absolutely perfect on its own, but can totally make other things even better.  Take fries, for instance…throw some chill on fries with cheese and – BOOM! – chili cheese fries!  You know what else works?  Leftover chili in the morning with a fried egg on top.  Yeap! Breakfast.  Counting the garnishes and side of cornbread, it’s basically all four food groups in one meal and who’s going to complain about that?  Yummy & practical? Love it :)!

Chili is definitely something I make regularly.  I can vary the meat or veg slightly (depending what I have on hand), but it is guaranteed to always be delicious. Just this past weekend I was doing some work outside, it was cold out and to come in to this warm bowl of goodness was awesome.  I made some corn bread to go along with…actually Cheesy Skillet Cornbread, cause how can you have chili without cornbread?  Well, you can, but it is some much better when you got some bread to dunk into.  And, whoever said no to some carbs on the side?  Ummmm….not me :)!  The recipe for the cornbread can be found here and once you’ve made this recipe there’s no going back!
