These no bake Fig and Pumpkin Spice Energy Bites will be your new go-to snack on the go! The base of them are dried figs and pure pumpkin puree and then almond and oat flour are added to the mix with some flavourings of cinnamon, nutmeg, clove and orange zest. Chia, flax and nuts add an extra dose of nutrition. Plus, they just taste yummy!
I’ve made lots of energy bites as of late (check out some great recipes from fellow friends and food bloggers here and here). I just love how quick they are to come together and so many healthy ingredients can get chocked into such a small package. I figured I’d give ’em a go and, ta da, Fig and Pumpkin Spice Energy Bites were born or, er, made 😀
Now, let me tell you a story herein referred to as ‘the kale incident of 2016’. Dun duuuuun!
Ok, you guys, I figure you know a little about me by now if you have been reading this blog for a bit. What you may not know, is that (like a lot of people) I am freaked out by creepy crawly things. Now, there’s certain classifications that I can somewhat tolerate…barely. And the context of which they are seen makes a difference. Like, if I were outside on the deck in the Summer soaking in the sun and a little spider was on my leg, I’d flick it away and that’s that. No biggie. Outside, what can ya expect, right?
I was working on a kale recipe…that was the plan. However, that plan came to a complete and utter halt. I understand that kale is grown in the ground, nature and all that good stuff, and if I bring produce home from the grocery or local farmer’s market it may, at times, have the odd little critter on there?However, as I was preparing the kale, tearing it from the steam, I thought, ‘ok, Dawn, that’s good, that’s enough for the recipe,’ thinking I better measure to ensure I had the quantity that I wanted for recipe writing purposes, ya know? I lifted the kale up out of the bowl to measure out and spotted…ok, I dare not say the name, in the bottom of the bowl. Wait, he has a friend…and another…he is a popular guy…AHHHHHHHHHH ‘his WHOLE family & all his friends must be here?!!!!!!!!’
I said to hubby ‘I can’t use this kale!’ standing there looking all stupefied and mortified all at once. I can’t tell you how many ways I screwed up my face and you probably wouldn’t even comprehend the grunts and groans and sounds that my body produced, but it wasn’t pretty. Hubby was, like, ‘Dawn, you have got to calm down!’ Then, he looked at me and I knew he thought he saw something on me. So my level of anxiety we from down here⬇️
to up here?? I screamed loud enough that it could only be heard by dogs. There was nothing on me, but even the thought of it…..so out in the garbage the kale went and I cleaned up that disaster zone. Listen, if I saw one, I’d be, like ‘ok, isolated incident.’ I get it. But, I just couldn’t handle this.
Ok, ok, that was a loooooong one, but I had to get that off my chest. Am I alone? Do you fear creepy crawly things or is it just moi? There’s no easy lead up into talking about this recipe at this point, so I’m just going to jump right in…store that little story deep deep down into the recesses of ma brain and not think about it again, k 😉
Onwards and upwards——->For these Fig and Pumpkin Spice Energy Bites, I knew I had to have a binding agent to, ya know, keep it all together and I know that peanut butter is often a popular choice for energy bites. But, I figured that pumpkin and peanut butter don’t really go well together. I was at Costco the other day and spotted organic dried figs. YES, I thought, that would be perfect with the pumpkin.
These Fig and Pumpkin Spice Energy Bites certainly do not lack texture; there’s texture up the wall in these from the seedy figs to the flax to the chia and then you have a little crunch from the nuts. These would also be awesome with some added chocolate chips….because, well, chocolate…duh 😛 I just love ’em and they are perfect for when you are on the go, as many of us are, especially this time of year!

Fig & Pumpkin Spice Energy Bites
- 1 cup dried figs -approximately 8-10
- 1/2 cup pumpkin puree
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1 cup oat flour
- 1 cup almond flour
- 2 tbsp chia seeds
- 1/4 cup flax seeds
- 1/2 cup pecans or walnuts -roughly chopped
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
- pinch ground clove
- zest of one orange
- In a food processor combine figs, pumpkin puree, maple syrup and vanilla extract. Blend until combined and smooth.
- In a bowl combine remainder of ingredients and stir to combine. Add fig mixture to this and stir to combine. Cover and place in fridge for about 20 minutes to harden slightly so it'll be easier to work with.
- About 1 tbsp. or so, roll into balls. I like to refrigerate these and eat chilled. Enjoy!
