This Cold Buckwheat Noodle Salad with Peanut Sauce can be made in about 15 minutes and packs a lot of flavour in so little time! Gluten free buckwheat noodles & some veg are lightly dressed in a creamy, flavourful peanut sauce and then garnished with a few sesame seeds and cilantro leaves for good measure. This salad is great for brown bagging it lunches or as a side for dinner with fish or chicken.
Hey everyone! How was your weekend? It was hot as heck here! No complaints, absolutely none, though. Before we know it it’ll be cooler so I’m going to enjoy it to the max. The humidity was high so it made for lovely hair weather. I have naturally curly hair and often straighten it, but during this kind of weather, I just have to let nature take its course, feel me?
We had so many good eats this weekend, you guys! We cooked lamb in the pressure cooker and made tacos and another night had ribs which were deadly. Speaking of deadly, I made a super awesome & delish Slow Cooker BBQ Sauce. The recipe is from a fellow food blogger and good friend, Karrie, from Tasty Ever After. Highly recommend it next time you have bbq. I made a rub, cooked the ribs and finished ’em on the bbq with this sauce and then used more on the side for dunkin’? The next day, I used it on chicken thighs with corn. Speaking of corn, for as long as I can remember I eat my corn in a sporadic line, i.e. messy. Hubby eats his perfectly in a line, as though a machine cleaned the kernels straight off. He always laughs at me ’cause it looks just like a hot mess when I’m eating it. Oh well, living on the edge, I guess 😉 How do you eat your corn? Are you on ‘team messy’ or ‘team neat’? Buckwheat Noodle Salad
Particularly during the week, hubby and I like to keep things on the lighter side. I always pack lunch and it always involves fruit, yogurt and some kind of healthier main, perhaps sardines or some type of salad. There’s only so many sardines a girl can get. Just totally getting tired of the same lunch every day. This Cold Buckwheat Noodle Salad with Peanut Sauce is a great way to mix things up a bit. Plus, it’s delicious cold (obviously from the name, right 🙂 ? ), so it is easy to eat on the go.
You can pretty much get buckwheat noodles anywhere these days, probably right next to where you would find chili sauce or sriracha hot sauce. Soba noodles are similar and would work great in this recipe too. These buckwheat noodles are lightly dressed. If you prefer things a little more saucier, then I recommended making 1.5 x the sauce.
Homemade Peanut Sauce
Speaking of peanut sauce, you guys, it’s so yummy! I had originally whipped this up when hubby and I were having lettuce wraps one day. I thought of all the flavours that would go together and quickly made this little gem of deliciousness. I wrote everything down (on some random piece of paper, as I normally do ?, but knew I had to put the recipe somewhere sensible ’cause this was a keeper. It only takes minutes to make, but tastes da bomb dot com. There’s natural peanut butter in there, along with ingredients such as sriracha and fish sauce. Now, don’t get turned off ’cause there fish sauce in there. It just adds a little tang; you’re not exactly going to think there’s fish in there 😛 So feel free to use this peanut sauce in another application like lettuce wraps or even tossing with spaghetti and chicken and garnish with some peanuts.
I served this Buckwheat Noodle Salad with Peanut Sauce cold, but it is equally delish warm. After cooking the buckwheat noodles, I rinsed them with cold water before tossing with everything, but you can just skip this step if you prefer things a little higher in temp!

Cold Buckwheat Noodle Salad with Peanut Sauce
- 2 tbsp natural peanut butter
- 1/4 cup chicken stock -or vegetable stock (unsalted)
- 1 tbsp fish sauce
- 1 tbsp low sodium soy sauce
- 1 tsp sesame oil
- 1 tbsp sriracha
- 1/2 lime -juiced, about 1 tbsp
- 1 clove garlic -minced
Cold Buckwheat Noodle Salad
- 275 grams buckwheat noodles -about 3/4 package (or soba noodles)
- 1 carrot -cut into matchsticks
- 2-3 red thai chili peppers -minced
- 3 tbsp chives -minced or green onion
- 1/2 tbsp sesame seeds
- handful cilantro -leaves torn
- Combine all ingredients in a food processor or blender and mix until combined.
- Pour mixture into a small pot, heat on medium low just until it comes to a simmer and remove from heat. This will take just a few minutes to come to a simmer. Cool slightly while you prepare the rest of the recipe.
Cold Buckwheat Noodle Salad
- Cook noodles per package instructions. Drain and rinse with cold water.
- Toss with Peanut Sauce and then mix in carrot, chili peppers and chives. Garnish with sesame seeds and cilantro. Enjoy!
