White Hot Chocolate with Peppermint Whipped Cream

This White Hot Chocolate with Peppermint Whipped Cream is like a dessert and drink all in one! The hot chocolate component  contains white chocolate, of course,  and a touch of vanilla extract and the whipped cream is infused with peppermint extract.  There’s no going back to store bought hot chocolate when you can make this at home in about 10 minutes!  Thirsty?

Hey everyone!  It’s Christmas this upcoming weekend!  What?!  I know.  I’m in shock too.  How was your weekend?  We had another busy one.  We had family over and it was a super fun day.  Lots of people stopped by, there was lots of good eats and definitely lots of conversation and laughs…what the holidays should be about, right?  We used the rest of the weekend to catch up on last minute things we had to do before the big day.  What a great weekend!  And you know what we watched?  One of my all time favourite Christmas movies…corny and funny all at the same time – Christmas Vacation.  I can watch that movie over and over and probably know most of the lines by heart.

See these glasses in this recipe?  My brother gave me those.  They are featured in that movie too. I recently saw the punch bowl version and may have to get that one soon 😉  The guys in my family even wear Christmas Vacation stocking caps on Christmas Eve.  So the love is real, lol 😀

In the movie they use these glasses for eggnog (which I also love and have been having eggnog lattes like crazy lately<—-thanks hubby (he makes ’em for me)), but this time I decided to try something a little different.  I love the combo of white chocolate and peppermint and you can even check out shortbread cookies with that flavouring here.  So good!  This White Hot Chocolate with Peppermint Whipped Cream is like a dessert and drink all in the one. And, you guys, this is too easy to make.  Seriously.  You would never guess that so much flavour comes through with so little effort.

Once the white hot chocolate is made, then you just garnish with peppermint whipped cream and some additional candy cane and white chocolate<—-optional, but totally recommend…it is the holidays after all!  I used food colouring to colour the whipped cream to make it a little more festive, but you definitely don’t have to do that.

I just love this White Hot Chocolate with Peppermint Whipped Cream.  It’s rich, sweet and that touch of peppermint adds that perfect little somethin’ somethin’.   If you have unexpected guests pop by, you can whip this up in no time at all and they will love you for it!  I’m sure I’ll be having more than one glass of this over the holidays.

I’m so looking forward to a lovely turkey dinner on Christmas day with my family and enjoying many nights over the holidays spent by the tree with hubby and furry child.  Spending time together is what matters most and I hope you get to share some quality time with your loved ones too.  Be in the moment and appreciate every single minute spent with them ❤️

Instructions
  1. In a heavy bottomed saucepan, combine cornstarch with 1/4 cup sugar and salt. Stir to combine. Turn on low heat and add milk. Whisk to combine and cook until thickened slightly and mixture coats back of spoon. This will take about 8-10 minutes. Add white chocolate and vanilla extract and whisk to combine and chocolate is melted, about 1-2 minutes. Remove from heat and distribute among serving glasses.
  2. Meanwhile, whip heavy cream with remaining 1/4 cup sugar, peppermint extract and food colouring (if using) until stiff peaks are formed. Top white hot chocolate and garnish with candy cane and additional white chocolate shavings. Enjoy!
Recipe Notes

This white hot chocolate is thick and rich.  If you want a looser consistency, I would recommend using half the amount of cornstarch.

Lots of people and food sounds perfect for this time of year. As does watching Christmas Vacation! Love this gorgeous drink! White hot chocolate is a favorite of mine. I don’t make it too often, but when I do, I savor every last sip. And that peppermint whipped cream is such a great idea!
