Teff Energy Bars
These gluten free and whole grain Teff Energy Bars are LOADED with goodness! There’s fibre and iron rich teff, almond flour, walnuts and let’s not forget chocolate. They are packed with less than 10 ingredients and it’s a treat you can feel happy about eating. An energy bar never tasted so delicious!
Hey guys! How did the weekend treat ya? Did you watch the big game? See all the commercials that cost a small fortune to air? Tune into half time? Eat your weight in wings or nachos? Do you know I heard the other day that there’s over a billion wings eaten during the super bowl! What?! That is crazy! That’s a whole lot of chicken! What did you think of that half time show with Lady Gaga? Holy moly! Does that chick have energy! What a show! After watching, I was seriously tired and pumped up at that same time. Um, Lady Gaga? YES!
So if you gorged a small bit yesterday, you may wanna flip the switch and turn on the healthy eating again. These Teff Energy Bars will do the trick. Healthy, but with a bit of chocolate so that’s a fair compromise, don’t ya think?
So, what the heck is teff ? This whole grain goodness only came into my world as of late. I was flipping through Ricardo magazine and they had a little section saying that teff is the new super grain. You know how every now and then a food ‘trends’? Sometimes it’s kale, sometimes it’s cauliflower. Well, I thought, better not miss that train. I’m often late to the party and no sir was I going to miss this one 😉 Apparently, it is an ancient grain originating from Ethiopia. It’s gluten free, whole grain and vegan. It has a definite unique texture, like you know it’s there when you put it in stuff, which, I guess, is kinda the point, right?
So, loaded with this information of this up and coming product I was bound to get my little hands on some. Having less than stellar luck with past gluten free baking projects and almost giving up all hope, I decided to give it another go. New year, new chances, right? And if you use vegan chocolate here (if you please), these are totally vegan friendly!
Now, step in Teff Energy Bars! Ta da!!! I whipped these up multiple times until I got them juuuuuust right. They are huge hit in our home. Hubby didn’t even believe me when I said they are healthy. He thought I put some magic in there. I asked him if he wanted some packed in his lunch and before I had a chance to finish the question, he shouted a big happy ‘YES’. And do you know even before I had a chance to take the pics for this post, he had his hands on them, so I may be a couple short 😉
Aside from all the goodness in these Teff Energy Bars, they are so easy to put together. Get out your food processor, blitz all the goodies up, place in a parchment lined baking dish and bake for a bit and you are done, son! Well, let that baby rest for a bit to set up. Don’t even think about cutting into these for a few hours. It’ll be worth the wait. Promise. I cut these into 12 pieces, but they are so rich and filling you can even cut into 24. But, I don’t think hubby would be too pleased ’bout that 😀
