Peach and Chickpea Salad

This Peach and Chickpea Salad is the perfect guilt-free side to have alongside your next barbecue.  It takes less than 10 minutes to make, vegan, gluten free and, most importantly, completely delicious!  There’s chickpeas and sweet peaches, of course, and also some fresh veggies like asparagus and bell peppers all tossed in a simple vinaigrette.  Totally fresh & super easy to make.

Hey everyone ! How was your weekend?  Hubby and I had a little staycation last week.  We had an awesome time, despite the weather being sub par (i.e. raining and chilly most of the time) and me having a little cold for the first half of it.  We were determined to enjoy ourselves regardless….with furry child too, of course 😉

We made some great food, ate at some of our favourite restaurants and went to see a couple of movies, Central Intelligence and Ghostbusters.  There was even one rainy day that we stayed home, made strawberry margaritas, ordered pizza and played a video game (Mario, lol).  Talk about a throw back and talk about fun!!  Never grow up, lol 😀 But it was so nice to have fun like that.  Why be so serious all the time, right?  Hubby and I are very like-minded so we make for the best of buds👫.

One of the best things we made (and are definitely making again) was Nashville-Style Hot Chicken.  Seriously, you guys, how good was this stuff?  We got the recipe from Bon Appetit and you can find it here.  Super spicy, addictively so, and we dunked it in some pecan flavoured syrup.  Ok, ok, as I’m writing this I want more of that chicken 😀  To go alongside, I made some coleslaw and it was the perfect accompaniment to the spicy chicken.  Totally recommended.  Hubby could have had it even spicier, but, you know, I prefer to not have my mouth on fire.  I mean, I LOVE spicy food, but I wanna taste it too, ya know?  Hubby loves spice even more than I do…next level stuff. Do you love spicy food?  I heard that you can kind of build up a tolerance for it.  I have, like, 6 kinds of hot sauce in the fridge at all times.


Luckily, the last two days of our staycation, the weather was nice and the  sun was out.  Woot woot!  After a completely relaxing, good-food-eating week, I was feeling like getting back into our regular eating and exercise regime.  Wanting something light and refreshing (and not wanting to spend all day making something), I threw together this Peach and Chickpea Salad in just a few minutes.

 If you have been reading my blog, you probably know by now my love of sweet and savoury things (add it to the list, right?) so this Peach and Chickpea Salad is right up my alley!  The sweet, ripe, juicy pieces of peach is the perfect contrast to the savoury chickpeas and veggies. basically throw everything in a bowl, mix up the vinaigrette and stir to combine everything.  Easy, right?

I served this Peach and Chickpea salad cold and it makes for excellent leftovers and picnic eating fare.  Maybe we will actually get to go for a picnic soon, weather pending! If you want to amp this salad up a bit, chicken would be delicious added to the mix.

There’s really nothing fancy here…not even trying to be fancy, but I can tell you one thing…it’s delicious!  This Peach and Chickpea Salad is a lovely recipe for maximum flavour for minimal effort for when, you know, wanna just chill or trying to make up for all that pizza and fried chicken you may or may not have eaten 😛

  1. Add all ingredients in a large bowl and stir to combine.

    Gotta love peach season, right? LOVE all the freshness in this salad. How was Ghostbusters?
    The pecan syrup dunked Nashville Chicken had me drooling! Fruit mixed in with a savory salad is always happening over here too. The pop of freshness and tang, good love it. This little asparagus tips too are da bomb addition, too. 🙂

      Yay for peaches! Wanted a fresh salad after all the indulgences of our little staycation…figured a light salad was in order 🙂 Ghostbusters was great. I know there were some skeptics, but hubby and I enjoyed it. There were some cameos from the original so that was interesting too, but the movie held it’s own for sure.
      That chicken is delish, Kevin. We are making again real soon we enjoyed it that much. P.S. we put the sauce for your garlic chili edamame recipe on some soba noodles and served with steak. It was awesome!

    There are so many awesome things about this post, Dawn! First of off, how was Ghostbusters? I want to see it, although not sure when that will happen with little Robbie here.       Thank you so much, David!! Ghostbusters was great! There were a lot of people not sure about it, but hubby and I enjoyed it and had a good laugh. There were some throwbacks in there to the previous ones, which was nice to see, but the movie did hold it’s own. Can’t beat pizza and Mario, can ya? Always nice to have fun like that and unwind and hubby and I definitely know how to do that 😉 ! I do know how you feel about the Nashville chicken…OMG….SO GOOD! Hubby would even like it a bit spicier. I love spicy foods, but him so even more. I really think it’s addictive! After all the pizza and chicken on our staycation, I was glad to eat this salad, but totally looking forward to that chicken again, lol 😀

Ross and I totally play Mario Kart every once in a while when we need to relax …we may have turned it into a drinking game at some point as well… now we just need to add pizza and it sounds perfect!
