Iced Coffee and Cocoa

This Iced Coffee and Cocoa beverage will hit the spot!  This takes about 5 minutes to make and combines just 7 ingredients, including ice.  Espresso packs a punch and the raw cocoa powder  adds a touch of rich chocolatey flavour.   It’s sweetened with some maple syrup that you can adjust to your own taste.  Sure to give you that extra boost of energy as the busy holiday season approaches!

Hi guys!  How’s it going?  How was your weekend?  We were pretty low-key.  Though, I did realize that time is slipping between my fingers and I still have A LOT of holiday preparation to do!  Here in Canada our Thanksgiving was in October so now for us it’s full steam ahead toward Christmas.     I was out and about this weekend and did some grocery shopping and couldn’t believe my eyes that the stores are full-on Christmas mode!  The local radio station is even playing a countdown to Christmas and now it’s only about 5 week left until the big day.  What?!  We even watched a Christmas movie – ‘Elf’ which is one of my faves.  What’s yours?

I’m like a big kid at Christmas<—-to be honest, I’m probably like a big kid most times.  You know why?  Or at least one of the reasons why?  My mom still buys me a chocolate advent calendar…well, one for each hubby and I.  I just love it🎅  I can’t imagine not having one, ya know?  Do you guys partake in the whole chocolate advent calendar thing?  It’s definitely a tradition for me and I’m HUGE on tradition.  Huge.   Plus, it’s a legitimate excuse to eat chocolate every single day for a month 👍😏

Before I get too far ahead of myself and explode from excitement ’cause Christmas is almost here, I want to tell you about my love for coffee.  Ahhhh, that magical brown caffeinated liquid of bliss.  Coffee – I just can’t quit you, boo.

This Iced Coffee is a perfect transition drink.  During the summer months and really even in the fall, I’m a fan of iced coffee.  Sometimes ya want something cold, ya know?  Then, as it gets cooler and there’s talk of the holidays cocoa makes its way into your life once again.  This recipe is a delicious marriage of the two!

What I was aiming for with this Iced Coffee and Cocoa  is something quick.  We all know that this time of year with all the upcoming holidays we are all so busy and ya might just need a little pick-me-up.  Whenever I’m having something to drink, whether it is coffee based (like those infamous pumpkin spice lattes) or something fruit based (like smoothies) I want something not loaded with sugar or fat, but still tasting good.  And if it gives me that much needed ‘energy- boost kick-in-the butt’, well, then, so be it!

You just use a couple of shots of espresso (that has been cooled) or an equivalent amount of strong coffee (even instant powdered espresso power mixed with water will do in a pinch), a bit of cocoa, vanilla, almond milk and maple syrup.  As I mentioned, I don’t like things too sweet so this wasn’t sweet at all for me, but you may want to add a little more maple syrup until it’s just right for you.  I take my coffee with one cream and no sugar, so that’ll give you an idea.  Side note—> coffee cream would be classified as one of those ingredients that I should give up, along with Cheez Whiz, but can’t or refuse to…..right hubby 😉 ?

I rimmed the glasses with some maple syrup and chocolate shavings, but that’s optional.  If ya don’t feel like wearing your fancy pants or you’re in too much of a hurry, just omit that step!

Instructions
  1. Place 1/2 tbsp. of maple syrup on a plate and grated chocolate on another. Dip the rim of each glass in maple syrup and then in chocolate.
  2. In blender combine espresso, cocoa powder, ice, milk, vanilla extract and remaining maple syrup. Blend to combine. Divide into glasses and serve immediately. Enjoy!
Recipe Notes

Each of my espresso shots were about 1.35 oz.  So altogether, I used about 2.7 oz of espresso or about 85ml or approx. 3 tbsp.  You can also substitute with your favourite coffee (if you don't use a strong coffee, the coffee flavour will not be as pronounced) or use instant espresso powder.

I used about 1.5 tbsp. of maple syrup per two beverages in this recipe.  It was not sweet at all.  If you prefer things a little sweeter, just add more maple syrup to taste.

    So our local Walmart put a daily countdown out for Christmas…like 2 weeks ago. Haha! That’s ok, though, as I do love me some Christmas holidays. And Christmas movies! Elf is a classic for sure, and I’m sure we’ll be watching it soon. I personally like 4 Christmases, too. It’s not a classic like Elf, but I just enjoy it. And then Love Actually. That’s one of the best movies of all time! It makes me want to curl up on the couch with blankets, a fire in the fireplace and one of these coffee/cocoa creations. These sound (and look!) delicious!     Oh yeah, we are full on Christmas mode too! Love Elf (Tyrion Lannister is hilarious in that one, that’s him right? The big shot writer??), though I think my favourite Christmas movie would be Love, Actually (or The Holiday). Who knew I had a soft side lol. Love this drink!     Dawn, we just started the chocolate advent calendar thing this year! I grew up in Sri Lanka where it just wasn’t as huge a tradition as midnight mass and boozy fruit cake was – and once I got here I never really caught onto it. Then, last week we were in Ikea and my daughter spotted those chocolate advent calendars and deemed we make it our new tradition – so here goes! 🙂
    By the way, this iced coffee and cocoa sounds wonderful – I am a sucker for Starbuck’s mocha and I bet this is way way better than that!

    I am not ready for Christmas at all! I don’t usually start doing anything till after Thanksgiving. It will be a mad rush to get all the shopping, baking and decorating done.
