Risotto.  Want to make something nice for friends/family? Risotto. Want something that tastes wicked? Risotto.  You get the picture.  Who would have thought that something so so simple like rice and mushrooms could taste so delicious?  I’m a BIG fan of mushrooms. BIG fan.  They are so flavourful, there’s all kinds of varieties that you can get, they can be used in so many dishes and they are super good for you.  I’m also a big fan of carby creamy goodness.  So, this recipe is a definite winner for me. This recipe makes about 4 appetizer or side dish portions or 2 generous main dishes.  Whatever risotto recipe you have tried before this, forget about it.  This one has you covered.
