I remember years ago before hubby & I were married and we were dating, he decided to make some guacamole.  Let me tell you, I tried it and I thought that it was the grossest thing ever.  I really did not like it at all!  I know. Crazy, isn’t it?!  To think about that now, I can’t believe it!  These days I absolutely love guacamole and just avocados, in general.  We always have avocados in the fridge.  Always. They are a definite staple in our household, right alongside milk and eggs.  I’ve never, but I bet I could eat an avocado like an apple I love it that much.

This Mushroom Risotto, let me tell you, is the bomb dot com.  I mean, it is really good.  It is like a big warm hug, the perfect comfort food. In from the cold? Risotto.  Want to make something nice for friends/family? Risotto. Want something that tastes wicked? Risotto.  You get the picture.  Who would have thought that something so so simple like rice and mushrooms could taste so delicious?  I’m a BIG fan of mushrooms. BIG fan.  They are so flavourful, there’s all kinds of varieties that you can get, they can be used in so many dishes and they are super good for you.  I’m also a big fan of carby creamy goodness.  So, this recipe is a definite winner for me. This recipe makes about 4 appetizer or side dish portions or 2 generous main dishes.  Whatever risotto recipe you have tried before this, forget about it.  This one has you covered.
