Hey everyone!  Happy Taco Tuesday!  Figured it was only fitting to bring you this delicious recipe today – Oven Baked Fish Tacos with Smoky Chipotle Sauce!

These tacos are unreal.  The sauce is the bomb dot com.  The think I could honestly tip the entire batch of sauce on my head & pour it into my pie hole and call it a day.  Seriously.  But that would be waaaay inappropriate and then there would  be  none left for the tacos and that would be a shame.

How’s your week going so far?  So, it’s officially Spring!  We are in the last full week of March and I don’t know where the time is flying.  Any upcoming Easter plans?  No big ones for me; I just know for sure that I’m gonna be eating a whole lot of turkey and Easter eggies (don’t you just love those?) Well hello there everyone!  How’s your week going so far? Everything is going great here, especially since I heard the other day that we are going to have an ‘above-average temperature’ Spring.  Woot woot!  We just had some snow (followed by rain) this past weekend, though.  Didn’t last long.  No biggie.  That kind of weather puts me in the mood for something in the slow cooker, you know, comfort food type of thing.  Thought I would make a batch of soup for the following week for lunches and stuff.  The choice was barley vegetable soup.  It had all the makings of a beautifully tasty dish – swiss chard, carrots, fresh herbs, you get the picture.  I put everything in the slow cooker and way to go.  Because it was Saturday I must have been going on auto pilot or Continue reading
