Pineapple and Coconut Ice Pops with White Chocolate, Toasted Coconut and Pistachios…ok, ok…I know that is quite the mouthful to say, but I love every.single.ingredient and it totally wouldn’t be fair to leave one out, would it?  The base of these ice pops are basically fresh chunks of pineapple and coconut milk, combined with sweetened condensed milk and coconut extract to add a touch of sweetness & further coconut-y flavour.  Then, the ice pops are dunked in some white chocolate and sprinkled with toasted coconut and pistachios.   A tropical delight, if you will🍍  You’ll never want to buy pre-made pops again!

Hello everyone!  How’s your week going so far?  Did you make it through Monday without totally falling asleep in the middle of the day?  Daylight savings time is great ’cause the days are longer, but I really missed that freaking hour.  Girl got to have her sleep, feel me?

Luckily we have copious amounts of coffee in our household.  And this past weekend hubby and I  got a new kitchen toy.  Yay!  We bought a Nespresso coffee machine.  Hubby had one at work and raved about it; it went on sale for like $80 bucks off so we decided to pick one up and so happy we did.  If you love coffee like hubby & I do, then you’d love this machine.  You’ve probably seen all those commercials with George Clooney and Danny DeVito going around making a big deal about the coffee that this machine makes.  I know, I know, like ‘what the heck, it’s only coffee; what’s the big deal, right?’ I dunno, they must infuse some kinda magic Continue reading

Yeeeeeah – wings!  I haven’t met many people who doesn’t love a good wing!  These Crispy Baked Curry Wings with Coconut Sriracha Dipping Sauce are oven baked so they have a little less calories than if fried, but are still super tasty and crispy.  Plus, they are a welcomed change from hot sauce dredged buffalo wings (not that I don’t love those too!), but sometimes you want something a little different, you know?  This recipe has curry and garam masala (which is a mix of spices, such as cumin, nutmeg, cloves and cinnamon).  Garam masala can easily be found in the spice section of your supermarket.  This, combined with the curry powder, adds a nice flavourful warmth to the wings.
