These Lemon Cream Tarts with Berries are so creamy, dreamy and the perfect Summertime treat! Ok, well, it’s not officially Summer just yet, but we can certainly dream (or at least pretend that it is through our food, can’t we?) These are so easy to prepare as I used pre-made pastry shells. You just make a simple lemon curd, fold it into some whipped cream and top with the season’s freshest berries you can get your little hands on. Drizzling with white chocolate is optional, but not really 🙂
A deliciously spicy dip, this Chipotle Lime Hummus is a great twist on a classic. Flavoured with chipotle peppers and fresh lime juice and garnished with feta and cilantro, it’s perfect for dunking chips or to use as a spread on your favourite sandwich or wrap.
Cod au Gratin is a traditional Newfoundland dish with the star ingredient being, of course, cod! There’s a lovely little béchamel or white sauce covering the cod and then it’s topped with cheese and breadcrumbs (or in this case croissant crumbs….eeeek – YUM!) and all baked in the oven until it’s nice, bubbly and brown.
This Grilled Halloumi Cheese and Couscous Salad with Orange Vinaigrette
has got it goin’ on, my friends! The salad component combines grilled halloumi cheese, Israeli couscous, sautéed kale and a few other stars and makes for the absolute perfect make-ahead salad for all the Summer bbqs you’re gonna have! It’s high on the flavour meter and guaranteed to be a recipe you’ll want to make again and again. On its own, it’s completely delicious, but also pairs well with fish or chicken for a satisfying dinner. There’s grape tomatoes, thinly sliced red onion, olives and sunflower seeds in there too for a little crunch and texture.
